Ryan's Chicken Schnitzel Curry
Ingredients:
2 Coles Australian Chicken Breast Fillets Sage & Rosemary Crumb
2 cups long grain rice
1 tbsp cooking oil
For the curry sauce:
1 tbsp cooking oil
2 tbsp curry powder
1 onion, diced
2 tbsp Coles Minced Garlic
2 tbsp Coles Crushed Ginger
1 tbsp Coles Asia Soy Sauce
1 tbsp Coles Pure Australian Honey
1 1/2 cups Coles Liquid Real Stock Chicken
2 potatoes, peeled and diced
2 carrots, peeled and sliced
1 tbsp corn flour
Salt, to taste
Pepper, to taste
To garnish
1 spring onion stem, shredded
Method:
STEP 1: Add the rice into a rice cooker with 3 cups of water. Set it to cook for 30 minutes or until the rice cooker button switches off.
STEP 2: To make the curry sauce, heat cooking oil in a large pot then add onions and cook until translucent.
STEP 3: Add curry powder, Coles Minced Garlic and Coles Crushed Ginger then stir until fragrant, approximately 2 minutes. Add Coles Asia Soy Sauce , Coles Pure Australian Honey, Coles Liquid Real Stock Chicken and 1 cup of water, then place a lid on and bring the mix to a simmer for 20 minutes. Add salt and pepper to taste, and stir intermittently.
STEP 4: Once the sauce has had time to develop, add to a blender and pulse until smooth.
STEP 5: Add oil to saucepan on medium heat, then add diced potatoes and carrots, cooking for 5 minutes until the colour starts to change. Add the blended curry sauce to the pot, then add corn flour and stir every now and again for 10 minutes. The sauce will thicken while the potatoes and carrots finish cooking.
STEP 6: While the curry is cooking, remove the Coles Australian Chicken Breast Fillets Sage & Rosemary Crumb from their pack and air fry for 10 minutes at 180C.
STEP 7: To serve, add the rice to one half of a shallow plate, then add curry sauce with carrots and potatoes to the other half. Slice the crispy chicken breast fillets and they lay on top of the curry and rice, and garnish with shredded spring onion.
STEP 8: Enjoy!

I always think of simple foods as comfort food.... mac and cheese ,mashed potatoes, chicken noodle soup, chicken and dumplings, ice cream, chocolate....stuff like that.
Comfort foods can really be anything, it's often simple, but for some people it's nostalgic or a mix of flavors or textures they love

@@yifanchen5262 No need to season the fish when it was topped by a well seasoned sauce. I don't add a lot of seasonings to meats if I'm going to top them with something that has a lot of flavor. It's a great way to reduce the amount of sodium while ensuring the dish has flavor.

Sounds yum. Mine is somethibg my granny made for easy lunch or breakfast lol. It was was a basic bake off banquet cut in 2 with cheese ham and sliced unions in between and then baked in the oven. It aint much but Allways brings me comfort

A Weird one from a Brit: Pacific Pie
A 294g can of Campbell's Condensed Cream of Chicken Soup
2 drained cans of Tuna in Brine
100g or so frozen peas
2 fresh sliced tomatoes
4 packets of ready salted/plain crisps/potato chips (Around 100g)
50g grated cheese
Boiled white rice to serve
1. Spoon half the tin of soup into a ceramic pie dish.
2. Mix in half peas and 1 can's worth of tuna.
3. Top with 1 sliced tomato.
4. Lay down a layer of crisps/potato chips (2 packets worth or 50g)
5. Repeat steps 1-3, ending with the remaining chips/crisps).
6. Top with grated cheese.
7. Bake in the oven at 150 degrees celsius (or 302 degrees Fahrenheit) for 30 minutes, then serve with a side of white rice.
I think they got the oxygen in the air from Coles.
I like how he said he likes a lot of cheese but only adds a few light springles of cheese on the pasta bake lol. It's like the opposite of other youtubers who say they will only add a light drizzle of olive oil but go ahead and use a shit ton of oil.
All of their dishes made me drool but especially hats off to Ryan and Will definitely dishes I would try to make myself!

I loved Courtney's fish sandwich. It reminded me of my grandfather who used to fish and fry the local shad fish every Sunday. He has Alzheimer's now but he still loves to fish. Seeing that sandwich made me want to go camping and fishing and fry what I catch. Thank you.

My comfort food is Filipino Misua! Its a meatball soup with very thin noodles and it makes my soul warm! My partner introduced me to it years ago and I'm still obsessed! I cook it at least once a week

Comfort food: congee mixed with pork mince (add salt and pepper to mince) , youtiao (Chinese doughnut sticks) century duck egg wedge sliced, garnish with coriander leaves and chopped green onion.

Hmm. I moved countries in my teens and haven’t really had foods of my childhood for decades. It’s so hard to reimagine what childhood food I’d have today because the food system where I grew up was quite limited and things tasted different. For example, we sometimes added sugar to vegetables because for whatever reason, the vegetables were bitter. Oranges also weren’t orange; they were green yellow and do not taste like the orange oranges. Imported foods, except for limited canned foods, was almost nil.
