So happy to see so many Asian traditions represented in this quintessential dish. This is probably one of my favorite chefs try each other's food videos.
As a Malaysian, nothing brings me more joy than to hear them say and recognise our beloved Mamak culture. Hearing them say Mamak was truly music to my ears. Thank you Jacob for advocating and sharing the wonder of Mamak food to the world.

We have all the ingredients in the house for the Taiwanese Fried chicken (well not for the sauce, no plum jam, and none of that branded BBQ). Malaysia got a lot of subdivisions in culinary. The mamak (indian-malay), peranakan (chinese-malay), malay-thai, indigenous (iban, kadazan etc) n of course authentic malay, indian and chinese. Hope everyone can try it.

Here is my Mamak Fried Chicken recipe: Blend: 1 lemongrass stalk 1 knob ginger 3 small eshallots 2 cloves garlic 1 kaffir lime leaf 2 tsp fish sauce 1 tsp cumin 1 tsp curry powder Sat and pepper 1 Tbls brown sugar 1/4 cup shrimp paste 400ml coconut milk Blend until smooth Marinade in chicken thigh and drumsticks (skin on) for 1hr minimum. Then coat in 1 cup of plain, rice and corn flour. 1 Tbls curry powder Salt and pepper 1 tsp cayenne pepper Fry in vegetable oil for 10 -12 minutes.
OMG as a filipino I wouldnt even think of SINIGANG (a sour soup) and FRIED CHICKEN together but seeing how Will create it made me salivate just by thinking about it! Definitely my favorite.

I wonder if I can replace the coconut milk in the mamak fried chicken with some greek yogurt instead, add some lemon for some acidity and then keep the spices in there. I'm definitely bookmarking this episode for some future cooking.

The drumettes are definitely white meat but the flats and tips are considered dark when it comes to cooking time like drumsticks or thighs.
You can tell they’re all good cooks with how descriptive they are, they all have good feedback and creative good dishes
