    Their wok skills are insane. But what I really admired was how everything was set out and prepared, and each chef knew exactly the components of each dish. And the best was watching them coordinate so that they constructed three or four plates together at once

      In the Chinese restaurant industry, traditional chef training is very time-consuming and it takes at least 3-5 years to master the required skills, knife skills, side dishes, cooking, seasoning, plating, etc. before they can advance to a qualified junior chef.

      Well, that's basic knowledge/skill for every chef on the planet. What I find more impressive is how quiet they are. In a lot of (western) kitchens there always is a lot of shouting and cursing.

    I was already thinking the chefs were probably Chinese before they opened up their mouth due to their amazing preparation and wok skills which is rare to find from native Japanese chefs even they are fully trained in Chinese cuisine .

    Fantastic cooking skills, a lot can be learned from these skilled chefs. It is still hilarious though to see people bothering with masks when sitting down in a restaurant to eat.

    For me, their mastery is amplified by the fact they're in such cramped teeny kitchens. Oh yeah, and NO extended handle on the wok, just the little handles! That's crazy.

    the white stuff by the wok I presume is water with cornstarch. Which helps thicken the sauce and make the food with the sauce looks very delicious and glossy.
    Man these two are a joy to watch. Masters in their crafts.

Potato starch has a lower gelatinization temperature (140-149°F/60-65°C) than Cornstarch (144-162°F/62-72°C), so it is able thicken liquids faster than Cornstarch, when heat is applied. Additionally, Potato starch is able to withstand higher cooking temperatures before separating.

    The Pro to me is how you manage the place to keep everything..as clean. Successful business came from to things, how to manage time and space.
