I learned doin grapes when your grapes start to get room temp they will slide off like yours are doing I take mines out the freezer in portions to insure that they stay cold
Yes. You definitely helped me, my daughter 8 and she found you, she told me she wanted to make candy… our first batch last night tasted burnt lol… so next time we will take out time
You’re welcome! To be honest I wouldn’t recommend shipping grapes because they break down fast and with this mailing system that we deal with sometimes packages sit at distribution centers and that is a big risk when you’re shipping out food.
Thanks for always tryna help us succeed, Ro 🙏🏻 we appreciate you! Question - someone at a market today was selling candy grapes. Because they weren’t in the freezer, they started melting a bit. Is there a way to help stop them from doing that? How would you sell/keep these good at markets?
Thank you so much and thank you for tuning in!❤️ actually if you’re going to sell candy grapes at a market, my suggestion would be to have a large cooler with dry ice in it to keep them cool because they will melt very quickly. Selling candy grapes at the market can be so iffy, but if it was me, I would invest in a small fridge like one of those college refrigerators to bring on site to keep them coated. You just have to let the person that is orchestrating the market or the pop-up event that you’re going to need an outlet for your area and you may have to pay a fee for that depending on that particular market or vendor event but that’s something I would do to keep my grapes Coated. But if you can’t afford to get a small refrigerator, then get a large cooler and put some dry ice in it to keep them cold. Just be careful with the dry ice.
I'm a new subscriber as of today, I saw a few shorts, and have fallen in love with your work! I'd like to try these grapes for my son party. The question I have is if you have to use your stove top, how do you recommend we cook it not having the proper cooker like you're using? I also wanted to say your explanation, and detail on how you broke it down was amazing I can tell nothing was left out like some tend to do! So Big Thank You.
Thanks for subbing!❤ Welcome to my Channel and I truly appreciate your kind words! 🥰 You can cook in nice heavy bottom pot, stay away from the thin pots because the mixture will heat up to fast. But you can cook onto your stovetop, cook on medium high or medium, remove at 300° and follow the rest of the steps after that. Good Luck and enjoy ❤️🥰
Ro, thank you so much for your videos. You are so knowledgeable and go into important details that beginners (like me) need to know. One of the points you went into detail about are the types of flavoring we should be using in candy. You said that oil based flavoring are to be used and not the ones for baking. Would powdered flavoring be ok? For example, citrix acid powder or Tajin seasoning? Or would this be something better sprinkled on the candied fruit after it's been dipped?
Hello your videos are wonderful and im just getting started. How do I get my candy mixture to harden after i dip my fruits? My candy never fully hardens and is always sticky.
Hello depending on the fruit that you’re dipping, some fruit needs to be froze to dip in your mixture check out some videos on my channel. I share a lot of information on how to dip candied fruit.
Hello love, I’m going back into the candy game it’s been like 6 years since I stopped, but my question is how do I stop my candy mixture from turning brown or burning? I never had this problem before, but now when I’m making my sugar it’s burning and I’m using the candy thermometer 🤷🏽♀️
I normally don’t store leftover mixture, but what you can do is pour your mixture onto a silicone mat. Make sure it’s a heat resistant silicone mat let it harden and then break it up and you can store it in the refrigerator or you can store the room temperature but it will become sticky so what you will just need to do is place it back into your pot and let it cook on low, but I don’t recommend this process because a lot of times when people do it they have a hard time achieving the color they had or it burns to quickly so you just have to be careful. I hope this helps.
I think a quality pot is necessary that is likely one of my mistakes. I will get one but for now my pot does ok. And she started losing grapes because the mixture thickend causing them to pullZ
Hey Ro, I’ve been making candy grapes for a while now and for some reason my mixture bubbles all the way to the top and overflows and I don’t know why. What am I doing wrong?
Did you pour the whole bottle of flavor because I'm trying to see why when I put two drops it taste like medicine even with the apples can you tell me what I am doing wrong please it's not the candy it's just the flavor
So, after graves are made, they are normally warm and I don’t like eating wild grapes and I don’t think anyone else would like eating warm grapes but if you want to enjoy them right away, placed them in the freezer for about 10 to 15 minutes and then take them back out and enjoy them. Just remember when they’re out at room temperature they will break down because they do not last long at all.
It’s really up to you if you’re not making them for your customers or for business and you can place them in the freezer until you’re ready to eat them and when you’re ready to eat them, take them out the freezer and let them sit for about 15 to 20 minutes so they can come down to temperature and then you can enjoy them Just remember the longer they sit out they will start to break down
I hope I get a response!!!!! I have used your recipe “To the T”. 2 cup sugar, 1/2 cup water, 1/2 cup Kayro. I do however put the color in first, which I have seen you do before. Stir the mixture, cook to 300 degrees, remove my pot from the eye, and dip. When I finished with the dipping and coating in topping, my product is picture perfect! However, when I woke up this morning (which was about 4 1/2 hrs later) they were leaking. I’m done packaging, air tight containers and all. Can you explain what I’m doing wrong?? 😢 I’ve done two batches in two days and both same outcome!!!😭 How long after you coat, do you put the grapes in the freezer? I do it immediately after. Thanks in advance for your advice!
Hey hun, if you haven’t watch this video HOW TO MAKE CANDIED GRAPES FOR BEGINNERS ua-cam.com/video/q1_0kQWNT00/v-deo.html Also regular colored grapes, meaning the solid color ones will break down in the freezer as well. As I mentioned in the video you’ll have a better chance having a longer shelf life for your grapes when you dip them in your candy mixture and then cover them completely with candy toppings, and always place them in the freezer after you many them. Hope this helps.
good mornig, how are you doing? how much do you charge for 30 grapes? thank you for sharing big gems. i make a brown butter cake and icing 6in bundt pan . put oreos in the center . icing the cake after it cool all the way down. top it with oreos and make the jolly rancher cake too. im having fun.
Great video, I have one question…how do you keep the solid ones from breaking down so quickly without having to wrap it in fruit roll-ups. The candy coated ones seem to last longer but the solid ones don’t
Hello and thank you. The solid grapes will break down quick and because they contain more juice water like constant. It’s hard to preserve the solid grapes they’re just going to break down within the time that is allowed which is the 24 to 48 hours after they’re made, or after they come out the freezer
Hi Ro, can I use a non stick sauce pan ? I love your videos this so helpful the prices be pricing 😂😂😂So I need to make my own at some point . Thank you so much for sharing this with us ❤️🔥🔥👍👩🍳
I can't thank you enough for this video. I just got started on candied fruit and I'm already panicking. haha I have used this recipe but it does seem to thicken. I've used 5 drops of white and 3 drops of color, chef master liqua-gel food color. I'm wondering if i'm cooking my mixture too fast, I'm cooking on a regular coil stove between 6/7. Maybe I'm going to attempt a slower cook at a 5/6. I keep telling myself to "just keep swimming"!
Slow cooking is fine and works. You have to make sure it reaches 300 and not over by much if at all. Then as it cools down it will thicken so if it’s cold in your house that could make it thicken faster other than that you should be able to work fast and have a good 10-15 min or so give or take to dip before it starts to thicken.
My candy is always thin when I do the 4-1-1 mix like my candy brake apart so easily. Is there a mix to make harder candy . I heard you say the more water the easier it dissolves should I only do half cup instead of a whole ?
Are you adding color to your mix because it should be thin and are you letting it cook to 300° and if you are letting it cook up to that point and still thin then you may need to change your thermometer
@@YourSweetConnection yes I do all of these things I recently bought the tall metal candy thermometer u have in your video and it’s seems to work well but I’ll look Into a new one

Not sure what brand you’re using for there but it has to say gel food coloring and some gel coloring products are not made to be used in a hot candy mix. But adding too much coloring will thicken your mixture as well.

Are they Better at the Soft Crack stage or Hard Crack stage???
If you only cook the grapes to a soft crack stage, they won’t even stand a chance of lasting
