My suggestion for storing candy grapes are to place them in the package after you have dipped them all and store them in the freezer. The shelf life for this particular treat is to enjoy them within 24 to 48 hours or you can freeze them up to a week and a half. Do not leave them sitting out at room temperature because they will melt within 24 to 48 hours.

Sounds like the candy didn't cook to the hard crack stage which is at least 298°on the candy thermometer, otherwise, they will be sticky. As far as transparency, you need to add a few drops of white gel paste.
