great job! as a greek dude who has lived my whole life in Greece, your tofu gyros looks a lot closer to real Greek gyros than most of the meat based recipes I see online
Idk if you’ve ever made one of those seitan logs that you roll in foil and then bake, but they are perfect for gyro meat. On a cutting board, place the log so that it’s standing up like a tree trunk and shave downward with a knife. Spin the log and repeat. The texture comes out perfect for gyros.
Love that! When I am making a kebab I am always using the dried Soja chunks/curls and marinate them over night. Cook them the next day in a pan and at the end add a homemade gyros herb mixture. The kids love it
seitan works extremely well for this too! texture is super similar to lamb and you can carve it thin without it falling apart on you. i’m sure you could make your own, but gusta makes a perfect one for shawarma / gyros.

I’m not a raw tomato person, but this looks amazing with some thinly sliced cukes! Especially when tomatoes are out of season or just super expensive, cucumbers add brightness & texture to sandwiches/wraps. Yum!

There's a great (but time consuming) recipe for vegan lamb kleftiko on the mouthwatering vegan site that I love using for gyro meat but I'm going to give the tofu a try, thanks! I love the mayo base for the sauce with lemon juice and a bit of water instead of vinegar, dill and more dill, and a bit of minced garlic or garlic powder an a dash of salt. Violife feta to level it up. Oh, and I also need to try your onions! 😊

Made this last night and it was really good verging on great. There was one dominant flavor that I wasn't particularly fond of and I'm having a hard time figuring it out. Followed the recipe to a tee using Vegemite and Kitchen Bouquet. I tasted all the ingredients individually and still can't place it. Someone described it as tarragon but I didn't use tarragon obviously. I do feel like it was an herb flavor but when testing them individually I still couldn't place it. I'll figure it out eventually and I want to thank you for making my request. It means a lot. It definitely hit the spot and reminded me of one of my favorites as a meat eater. Greek approved!!!
@@TheeBurgerDude no need to apologize it's a personal preference. Like I said it was very good. Maybe the marjoram takes on a different flavor when cooked. I'll have to experiment and find out. Thanks as always.
Found out recently that coconut oil (regular, not liquid) works so well as a binder for many things it grabs the flavor profile of your choice and acts almost like a fat and saturates everything perfectly.
Just tried the tofu version with the vegan mayo sauce and all i have to say is THIS. IS. FLIPPING. AWESOME ! If somebody cooked me a shoe sole in this marinate i'd gladly eat it. It's just THIS good. And that tsatsiki is perfection. Man, this recepy changed my life for the better. THANK YOU! 👏👏👏
For my Vegan gyro I do marinated pulled oyster, thick chunks, and into the oven, and it is awesome. Well here we also have premade vegan gyro. XD. Definitely the tofu recipe is one I wanna try. Thanks for the video.
Interesting techniques. I'll try the umami ingredients that I don't already have. Personally I've found Soy-Curls perfect for gyros. I use 16 bottles of herbs and spices though. Fenugreek seems a big factor in flavor along with caraway.
i personally am a vegetarian so for Gyros i use TVP and the marinade i use yogurt with basically the spices you listed and some oil. i add a LOT of salt tho. maybe too much but my idea is to only put salt on it and not on the rest of the gyros ingredients. after i've marinated the TVP for a few hours, i put them in the freezer and use them as i go. by cooking them in the air fryer ( on a stove , oven or a grill may also work) and i have a nice meaty thing to add to my dishes every so often for a few weeks (Oh. also- i add boiled water to the TVP before marinating them and squeeze out the excess water before matinading them so that they're not rock hard but also the water doesn't dilute the flavouring)
These gyros look delicious!!! I wonder if using store bought seitan and cooking it directly in the pan could work, I'm not brave enough to use the oven in summer 😂😂😂
You could use parchment paper, but the stuff I use is called sandwich or deli paper usually. You can find it online or at a place like smart & final or a restaurant supply store!
It looks great, but the crinkle cut fries are a bit out of place. It's OK though. But do gyros usually contain potato? I've actually never had gyros before. I've had falafel though, I've also made them from scratch myself, even the pita pockets.
@@TheeBurgerDude I did use black strap. It gave it a little sweet flavor that wasn’t there when I tasted it straight out of the oven. It was still good but didn’t taste as good as it did right out of the oven. The flavor before I put it in the pan was great and was very close to what I remember a gyro tasted like. The molasses just made it a little too sweet and I’ll make it again with just adding a little gravy master and garlic in the pan. Thanks!

If the seitan tastes meaty already I’d just use the gyro seasoning minus the salt if the seitan is salty enough as is. 👍🏼
At home, i have smoked paprika and smoked salt but i can't seem to find liquid smoke where i live. Is it salty?
No just very smoky. You could just use more smoked paprika it’ll still be great!
