How to Make Authentic Taralli Pugliesi

  • Taralli Pugliesi - Tarallini Pugliesi - Tarallucci Pugliesi

    Ingredients:-
    50 to 55 small taralli
    3 3/4 cups flour (550 grams)
    1/2 cup extra virgin olive oil (120 ml)
    3/4 cup white wine (200 ml)
    2 teaspoons of salt (10 grams)
    1 tablespoon fennel seeds (8 grams)
    You can also make black pepper flavor or red chili peppers. Add according to your taste.
    Directions:-
    Step#1- In a stand-up mixer with the hook, attachment add your flour and salt. Slowly add the oil until it’s crumbly.
    Step#2 -Add your fennel seeds and slowly add oil. Mix until all combined.
    Step#3- Move on a working surface and mix to form a ball.
    Step#4- If it doesn’t come together add a little more oil until you have a soft pliable dough.
    Step#5- Let it rest, place a 5 to 6-quart pot filled with water on the stove and bring to a rolling boil.
    Step#6- Cut the dough into pieces and roll small logs 6 inches long. Cut in half and create a circle, pinch both ends to close to seal.
    Step#7- Keep doing this until the dough is finished. You should get between 50 to 55 taralli.
    Step#8- Add one at a time in boiling water and don’t overcrowd. Once they come to the top they’re ready to be removed. Use a skimmer to remove one by one.
    Step#9- Place on a cookie sheet covered by a kitchen towel to drain.
    Step#9- Place on a cookie sheet covered with parchment paper. Bake at 350 degrees (convection) (180 Celsius) for 45 minutes or until all golden and light.
    Enjoy!
    Anytime is a perfect time for taralli. I say Tarallucci because it means small taralli.

    Thank you for amazing recipe! I made them, but used dry red wine. They are veeery tasty! I put basil, oregano and thyme and a bit of paprika.

    I use to make these taralli when I was a young girl 👧 I was in charge of the boiling ,this brings back so many amazing 😉 memories
    Cooking with my mom,I lost my mom 8 years ago this May I still miss her so much. Finding your videos have made me so happy 😁 I thought this family recipe was lost to me forever I can not thank you 🙏 enough .MY broken ankle is slowly getting better so I am going to have to catch up on so many wonderful recipes.most of your recipes are ones I grew up with so thank you 😊 so much for posting them .

    I made this recipe today and substituted Rosemary for the Fennel. They smelled amazing and taste wonderful! I will be making sweet ones next. This was so easy.

    My father loved these, as kids we didn't like them as they didn't appeal to our young tastes, but i grew to like them so much that i would hear..

    Hello Alessandra. Love your channel. Would these be cooked/baked the same as Friselle black pepper biscuits? I remember my mom buying (rock hard) black pepper biscuits at the Italian store. We'd put them in a bowl of soup etc. I've looked online for Friselle recipes but some look like bagels and some like biscotti logs. Are these all the same? Do you know why some cooks skip the boiling water process and only bake? I do not speak Italian and I love hearing you speak Italian. It makes it so authentic and closer to the culture. Have you considered doing a voice over, in Italian, of your English videos?

    When I make these I like to add black pepper along with the fennel seed I think they go amazing together I love your recipe

    I want to try this recipe, however I don’t have a stand mixer...do you think a food processor could work?

      Hi, I would process the ingredients qnd them move them to a work surface. It’s not an easy dough because it tends to fall apart. Roll small log at a time. Hope this helps. Grazie be safe and let’s keep cooking together. 🥰🇮🇹

      These recipes are very old and traditional. The people used what was in hand and made by them on the farms.

      @@mohgoda9992 apple juice would be the better choice. Balsamic might be too strong. Maybe try 1/2 and 1/2.
