This is really amazing. I have worked in a fast food chain in the past, it's always about quantity over quality. We just needed to get the product out quickly but got to respect these small family owned restaurants, they always take time to ensure what they are serving has that personal touch.
I've watched so many of these Japanese restaurant preparations and the one thing I always look out for are the different soup bowls. So many nice designs1 Some are simple, others have a very distinct style!
if this level of food was served in europe it would be super expensive. They just don't put down the amount of work to make this stuff anymore. If you make your own pasta fairly to order, you be charged like you wouldn't believe it. apparently it's a pain in the ass to do, but in Japan it's your average daily diner. :)

I argue that this stems from the fact that they value the quality of their work very high... whereas europeans value a quick buck.

And you should know how desperate I am to buy a plane ticket now to Osaka & have breakfast there the next morning!! 2022 for sure.

in indonesia and most of asian countries, there are still a lot of restaurants/stalls that serve foods by order and with personal touch like this

一久さんは「お饂飩にお揚げさん→きつね」「お蕎麦にお揚げさん→たぬき」なんやね。
（なぜか英文字幕では"Kitsune udon"/"Tanuki udon"表記になってたけど）
「きつね」と「たぬき」に関しては、全国津々浦々お店ごとで変わってくるからね仕方ないね。
