This Mango Pickle recipe that I have shared with you is an easy Mango pickle that you can make in 10 minutes. And the good part, this mango pickle will not spoil at all.

Mango Pickle in 10 minutes
Preparation Time: 10 minutes
Makes: 1 kg
Ingredients:
1 kg raw mango pieces
1 tbsp turmeric powder
2 tbsp Kashmiri chili powder
3 tbsp salt
1 cup mustard oil
¼ cup white vinegar
2 tbsp fennel seeds
2 tbsp mustard seeds
2 tbsp fenugreek seeds
2 tsp nigella seeds
Method:
Wash, wipe and cut mangoes into small pieces.
Mix in 2 tbsp salt and set aside for 5 minutes to sweat.
Meanwhile, lightly roast the fenugreek, mustard and fennel seeds and grind coarsely.
Heat the mustard oil to smoke point.
Remove from heat and cool.
Drain the moisture from the mango pieces and mix in all the other ingredients. Mix well and store in clean glass jars.

Hello Pankaj ji, I always heard that we should not grind methi for achaar because it's sour in taste. Achaar bhi kadva ho Jayega. Roasted whole methi we should put. Pls clarify my query.

You shouldn't grind methi dana that is why it became bitter and is now wasted. She has shown wrong.
