    Just a heads up, I tried using both 100% orange juice AND from concentrate. I did NOT care for the canned concentrate and will stick with 100% OJ. The flavor of the canned OJ concentrate almost had a bitter taste to it. Not sure if that's from the fillers or not to make the concentrate.

      I've passed up a bunch of O.J. that's been in sale because I didn't have room for it in my refrigerator. (I drink a lot of milk. 3 - 4 gallons a week) and though I live alone refrigerator space is usually at a premium. So this is great to know! Thank you.

      @@OuttheBackDoor 😳. So, you don't need to worry about the pressure, just make sure that you have a steady stream of steam and process for the any of the that you would normally do in a wbc? Or am I totally confused? Thank you!

    I'll be canning this next week. I'm so glad to know steam canning is possible with my pressure canner. I had just added to my Amazon cart a steam canner. I am going to delete that and save my money. So thankful for the information. ~ I just wanted to add - I love the idea have having a citrus item in my pantry. If things get really bad, I want the security of knowing I have a source of vitamin C in my shelf-stable pantry. Thank you again..

      Hi Robin. I didn't have room for another canner and if the PC will do the stream canning, I'm all about it! I rarely WB can any longer. You mentioned vitamin C. Be aware that you are destroying most of the vitamins in ALL fruits, vegetables, and juices when they are subjected to heat. That's why many times you'll see on bottles "fortified with XX" because they are trying to replace the vitamins that were destroyed in the processing. Just a reminder. 😊

      😂 It's nice to have juice on hand! This applies to ALL the canned foods we buy at the grocery store. Steaming fresh veggies is the most beneficial way to eat our veggies. Sometimes that's better than eating them raw because it's easier for us to digest. BUT! WELCOME to the world of canning! I hope you're enjoying it and having fun! 😊

      @@sclark22223 Hi S Clark. It's very rare that my water bath canner is used anymore. I generally do large batches of everything so I like that I can double stack in my PC while using a small amount of water and I'm not actually pressure canning. So much more economical! ☺

      Yes I do! Although videos that I share making and canning preserves, I usually do WB canning for the presentation. For the most part anything I would WB can, I now steam can. To be honest, I don't think I know where my WB canner is. 🤷‍♀️

      If I'm remembering my directions correctly on my steam canner you can can anything you WB as long as it doesn't go over 30 minutes!

      Hi Kricket. Thank you! I enjoy juice, so canning my juices (all sorts of fruits from our trees and bushes) may be a luxury some day. As you mentioned, we may not have the availability to fresh fruits. One thing I will mention because I've had many ask, any time you process fruits and juices, you are losing nutritional value. That's why so many commercial juices are fortified with vitamins. I also make sure to have bottles of vitamins on hand. Even if the best by date is past, they will supply a person with needed nutrients in an time of emergency. I think you understand. 😊

    I got get more orange juice so I can do this again. I only have two pints left,I thought it turned out so good, I really didn’t think it bothered with the taste and texture of it. I’m a diabetic so it nice to keep around my place,a couple of my friends in our apartment building are also diabetic so that will help them if they need it,they know that I am keeping it on hand.

      Hi Alfreda. That's a great reason to have canned OJ on hand all the time. And that's very thoughtful of you thinking about the others in your building that may need it too, especially if yours or their blood sugar really drops. This is an excellent testimony as to why keeping your pantry stocked with a variety of things could help medically as well! 😊💗

    We love orange juice but do not like the waste if we don't drink it in time before it spoils. I can can pints and still save with buying larger quantities.

      Hi Harmony Hill Homestead. So far the longest shelf life I've had in the pantry is close to a year. I'm rotating through it at that speed. Speculating, I would say *at least* 2 years? I hope this helps. 😊

    Can you elaborate on what you mean by siphoning if you raise the temp too quickly on “cool” jars? Thanks

      Hi Colleen. Siphoning is when the liquid starts coming out of the processed jar between the rim and lid while processing. This can lead to seal failures and/or micro particles between the rim and lid causing a micro leak which could eventually lead to a seal failure in the pantry. When I've had siphoning on any of my jars and the jar lid feels sealed, after removing my bands and washing up my jars, I'll make sure those are in the front for me to use right away in the pantry. A siphoned jar may not lose its seal for a few months down the road and on occasion the seal doesn't fail. If you notice the liquid level is lower in specific jars, it's quite possible it siphoned. I hope this helps. 😊

    I WB meat products for the 3 hr timeframe. Would I be able to steam meats for the 3 hrs, safely? Love this video! Ty

      Hi Julie. In theory that should work, but you want to make sure there's an adequate amount of water in the PC so your canner doesn't run dry during the process and warp it. My question for you is if you're going to use a PC to steam can in place of WB, why don't you just PC the meat instead?

    Oh Mickey....your bloopers just about killed me!! Thanks...it was just what I needed girl.
    Just never thought of doing orange juice and thank you so much for telling me about the concentrate having that not acceptable taste. That is normally what I buy.
    Also, as always, you have taught me to do something else with my canner other than pressure can. A friend bought a steamer. Sort of wanted one but didn't figure it was in my budget just now. And look what my friend has shown me today. You the best, Mickey. Thanks and Jesus bless you always.

    So you are just letting the canner vent steam for 15 minutes, correct? Also, can you put everything in cold and start cold, get to venting and go from there?

      Hi experimentalbaker. You are correct. I'm venting for the required time of water bath canning, 15 mins. Yes, you may start with everything cold, but when you turn your heat on, raise it gradually. Raising the heat too quickly may cause siphoning or temperature shock and broken jars. Once the PC starts venting a good stream of steam, start your timing and turn the burner off when the time is up. I hope this helps. 😊

    So, you are not putting a weight on your steam vent? Just bring slowly up to boil and let it stay venting a steady stream of 15 minutes before turning off heat. Then let it completely cool before removing canner lid? Thank you.

      The longest I've had canned OJ in the pantry so far has been about 3 years. If stored properly, it should be good longer. 😊

      Hi Mary. I've got some in the pantry that's about a year old. The color has darkened a little bit it still tastes fine. Over all I would say it should be good for at least 2 years. 😊

      Sharon, if it's bottled and on the shelf already at the store, you're better off just keeping it like that in your pantry, especially if it comes in a glass bottle. This method of canning (steam canning) juices comes in handy for the juices that are fresh or refrigerated, or frozen concentrate will work so you don't take up freezer space. 😊

      So you do have a PC, but have chosen to WB can all your foods? I'm not against that, especially when most counties in the world do all WB canning. I started WB canning my green beans for quiet awhile before deciding to PC them. It was quicker using the PC over all in time, and I didn't notice any difference of the texture being softer. My main concern is running your canner dry for a 3 hour period. Honestly, I would say you're better off to continue doing your 3 hrs WB as you've been doing.

    It is not much vitamin C left after this treatment....It is ruind about 70 degrees c.

      @oyvindbrustad I agree. Stop to think about when you buy juice from the store and when reading the label it may say pasteurized and/or fortified with vitamin(s) C, etc. The only way to truly get your vitamin C from the OJ is to drink fresh squeezed and as soon as you squeeze it so it doesn't start to oxidize. I'm doing this for the convenience of having it on hand or when the grocery store shelves go empty. 😊

    I would like to see more about the steam canning Once I get a steady flow of steam, then I process for the recommended time? And not put on the “juggler”

      Hi Carol. You are exactly correct! Once that steam starts flowing, set your time for the required time for water bath canning and let it vent. No jiggler! Once your time is up, turn your heat off and wait for the residual steam to stop coming out of the vent pipe. Then you can remove your cover. I rarely use my water bath canner any longer. I can in large batches for the most part so I'm able to double stack my jars in the PC, using the required amount of 2" of water for my AA PC, and steam can my water bath canned products. Saves water, time if normally doing multiple batches, and one less piece of canning equipment to invest in and store! 😊

      Carol, I steam can ANYTHING that WB canning is called for and for that amount of time. And I don't add any additional water. You won't run out unless you forget about it and walk away! 😟 We got several inches of snow and sleet the past few days. Yesterday it took me almost 2 hours to shovel the front and driveway. I'll wait for the snow tomorrow to come before I'll do the back, too. How much snow are you expecting? Now I need to look at the radar to see if we're in the same storm front.

      Hi Joyce. There's a reason they fortify juices that are store bought. They've been processed to a certain extent. I can OJ to have it in my pantry for emergencies. I've also got bottles of vitamins in another "pantry". 😊

      Hi Tina. If you're talking room temp? Yes, but bring your temp up slowly to avoid the possibility of temperature shock and breaking jars or siphoning. 😊

      Hi Kimberly. When you heat ANY fruit or vegetable with any type of process, including steaming vegetables to eat, you lose some of the nutritional value. If you notice, some juice manufacturers may put on their labels, Fortified with vitamins. Also, juice from concentrate has different additives in it from the process of making it into a concentrate.

    Thank you! I don’t like water bath canning at all, (takes way too long to heat all that water and I always end up burning my hands in the water somehow). So I’ve been pressure canning at lower pressures the foods normally done by water bath, such as apple sauce, etc. This looks easier. Thanks again!

      Hi Von D. I've been on a fast of all social media for awhile and recently I've had a few people tell me all my UA-cam content was gone. I'm trying to upload the videos again but it's going to take some time. UA-cam allows me to upload a few a day and that's it. I think it's to make sure I'm not a robot or something as far as spam. I'm trying to upload the more popular videos to begin with. I can schedule the ham video for tomorrow if that would be helpful to you. 😊

      That's a shame they disappeared after all that work you did loading them the first time. A couple of months ago, I commented on a ham video of yours....I was coming back to add an update. I was asking you about the taste & texture of a home canned (precooked) ham. I did 2 qts and a pint of a precooked ham because I can't find an uncooked one. That was in September, we opened one recently.....I'll have to say, the flavor of the ham went back into it and was very good.

      Hi T. I don't recall the last time I used my WB canner. I take that back. I did a couple of videos putting up juice or preserves and I used it. But I generally can in larger quantities and double or triple stack in my All American 941 with the required 2 to 3 inches of water per pressure canning and use it as a steam canner. Works like a charm! I also use my smaller PC to steam can smaller batches. Anything I would WB can, I steam can. I'm glad this was helpful and thank you for watching! 😊

      YES!!!! Rarely do I water bath can any longer! Being I do larger batches most of the time, I love that I can double stack in the PC and steam can instead of WB canning. 👍

It's only the 2nd time in our entire marriage that he's given me anything for the house for Christmas...the only other time was our 1yr...I told him tools don't count for holiday presents, personal things Do, but to be fair, I asked for it! 😁

      @@OuttheBackDoor I've wanted a pressure canner for decades and I can use my pressure cooker to do up to 5qts or 5pts only, but I had fails because I can't regulate the pressure. There is no rocker for it, and I'm at over 5,000ft elevation. I think this is going to be a great investment. I just have to get over opening it. It wants to vacuum seal itself. Hubby uses a rubber mallet. I know the manual says to use a screwdriver but I don't want to damage the aluminum.

      Run a thin coat of olive oil around the metal gasket area before putting the top on. Mine vacuum locked on me the very first time but I forgot to oil the gasket. Check in your manual. It will explain better and I think there's a diagram. They also say you can use a real thin coat of Vaseline but I stick with olive oil. Haven't had it lock since. I did use a screwdriver to break the lock on mine.
      I never used my pressure cooker as a canner for the very reason you mentioned, no way of knowing the pressure.

      Hi Tammy. The longest I've had any OJ in the pantry has been about a year, but that's because of how fast I go through my rotation. Speculating, I would say easily 2 years. I hope this helps! 😊
