    One thing I've noticed, since I've canned for over a decade now, is #1 regs change and #2 how much water is wasted in canning. Now that we're off grid, conservation with water, electricity, and gas is very important. If I was using a 2nd canner anyway, I'd have dumped that hot water into that canner to fill it up. Since the jars were sterilized, it's clean hot water. I'd have started with the first and only canner if I were using 1 pot and multiple batches anyway. I'm just thinking that if ppl want to can, they want the cost of their product as low as possible. Water can cost by the gallon (tho we have a well), propane costs by the gallon for heating the juice, canner, and hot water. Electric for electric water heaters and stoves.
    Not to be critical at all! I love you! But I never realized how poorly I used my utilities when on the grid with utility bills. Right now, we have to conserve electricity due to limited solar. But propane can be a huge cost. And like I said, if we're canning to save money, there's many ways to do that

      Also the used water, when it has cooled can be used to water the garden instead of poured down the drain. A big hello from the dry land of Australia. Loved the video.

    Sara your old kitchen was much smaller! The sound of your videos today is so much better. I like the old style kitchen as it reminds me when life was much kinder & people where friends. I grew up when USA was the best of times.

    My brother brought me a case of oranges from Mexico, he's a OTR truck driver. The oranges don't want to separate into segments, so I'll make juice. Searching for the best method and Living Traditions has it. You are a lovely person. Thank you very much.

    Hey Guys my name is Paula I want to say I am making chicken sew and I am trying your bread today and love it Thank you so much my dinner was awesome with the bread when I make bread it call for one tablespoon of yeast but yours was so less it was good my bread takes an hour 11/2 to do that is not baking time baking 35min it is good bread. Thank you guys God Bless

    If you seal those space taker jars you'll have water canned in case of emergency. I have city water here and our lines freeze in the winter sometimes leaving us for days without water. I'm no "prepper" but I do try to be prepared for situations that I know are coming up.

    Hey Sarah, From Biloxi , Mississippi.
    We have a tangerine tree that produces some of the juiciest and sweetest juice.
    They are so full of seeds though so we have usually make a batch of wine.
    I never thought of making canned juice. I am glad to see it can be water bath canned.
    We also have a couple of satsuma (Mandarin) trees, so good! Thanks for sharing !

    I use to live in Florida where I had orange trees, but here I am now in NW Arkansas, Ozark Mountains, and no orange trees here either. But it was great watching your video.

    I find that it is a lot of work to can, dehydrate and preserve but it balances out in the end because I don't have to grocery shop as much. The time in the garden doesn't balance out but it is my hobby so that is all fine. Thank you for being such a good teacher of all things homesteadlike.

    Wow, I found an LTH video that I had not seen, ever. Both of you are such natural teachers, it is amazing, your girls are so lucky. My dad was a great teacher, but my mom, not so much. So I learned how to garden, how to drive a tractor(Iwas five when he taught me that), lol. I can change my oil, and thankfully I was fascinated by the Food Network years ago, when it started. My mother even said a huge family gathering that I was the best cook in the family. That was high praise from her to me!

It was a beautiful kitchen but I prefer your kitchen now... maybe I’m just used to seeing it but I always feel like I’m visiting with an old friend when you guys are in the kitchen, it’s so comfy and real ❤️.       I heard you can grow citrus indoors as houseplants in cold climates, I'd try it but citrus grows like weeds where I live right now

      Citrus will grow pretty well west of the Cascades just need to cover it when it freezes

    Great video Sarah, and you diffinitlly have only gotten better in front on the camera. You're just as lovely today as you were four years ago, like a fine wine you only get better with age!!!
    Here in Michigan we are not able to grow citrus trees, but my mother always canned tomato juice when I was growing up and it was delicious!!!
    You're a wonderful teacher, you have a natural ability and teach with amazing style and grace!!!
    We all know how much the weather plays a majority role in gardening, and this year so many gardens are suffering. Blessings to you and your family, and may God still bring you a bountiful harvest to enjoy and persevere for the year ahead!!!

    Oh my. I too lived in the Phoenix area, many more years ago than you. I left in 88. We lived on the other side of the "Valley of the Sun" out near Sun City. I grew up on a citrus and cattle ranch. The one thing I never knew how to do with citrus was can the juice. Now thanks to you I do. Oh by the way you CAN have citrus trees where you are. They actually have miniature trees, Lemon, Tangerine, Orange and Lime. At their largest they will grow very well in the mineral tubs. They would have to be brought in the house during the winter. I couldn't live without my citrus trees and I have the minis. I live in NM now at 6500' When we built the addition this past year one room is for my plants. LOL I am on the second year with them and actually have a little bit of fruit. I don't believe that I will ever have enough to make juice but when they are on sale in the winter this will be on my list.

    THANK YOU SO MUCH FOR THE TIP USING WATER FILLED JARS TO STABILIZE THE CANNER ! None of the canning vids I've watched nor the Ball book mentions this and I did lose a number of jars to falling over.

    I'm just starting this adventure but remember my mom canning things out of the garden when we were little. She used to keep her jars hot in the oven on low heat. I guess that was the equivalent of them being in the dishwasher

    Tons of Citrus canning on UA-cam, it is interesting how some things have evolved recently. I still use the old fashion way as I have lots of lids still in stock.
