Thank you for your tutorial. I know 'Dutch Baby' from my childhood under the Swabian name of Pfitzauf. My grandmother used to have a special pan for it. I decluttered my kitchen appliances and now have to put up with a skillet and Dutch oven by Le Creuset as well as a hand mixer by Kitchen Aid. No oven anymore. I'm still experimenting how to achieve the perfect Pfitzauf with the devices I have left. 😂 ❤
My family has been making Dutch Baby for several generations. It’s a tradition for holidays. We always serve with powdered sugar and lemon. Our edges always fall within 5 min of taking it out of the oven. When I had it at a restaurant they stay solid/upright. Maybe they add baking powder?
I followed a very similar recipe with 1/2c milk, 1/2c flour and 3 eggs. I heated my convection oven to 400, put my cast iron skillet in there for 15 min, removed the skillet and added 3 tbs of butter to coat the bottom and sides. I did this recipe twice -- once with skim and the the other with 2% milk. On both occasions, the batter did not puff and rise and my final result was a flat, disc-like pancake. What am I doing wrong here?!?!? HELP!! 🙂
I made this recipe and it turned out perfect! But there is no way in hell I can afford the awesome beautiful 3-piece set of ceramic covered cast iron Skillet and Dutch oven! Seriously $250 for two pans and a lid? Well yeah if I had money to burn I would totally buy it but I'm on a limited income Social Security disability so anyway but nice try🎉
I call them pannekuchen. We had a chain of restaurants called Pannekuchen House and thats what they served, topped with different fruits. I liked the apple cinnamon. The waitresses had to wear this ridiculous fake "dutch" costume. I always felt sorry for them.

FYI....when removing a hot pan from the oven/stove, leave the folded towel/pot holder, set on the handle, thereby indicating "HOT" handle!
