The reason they may have been splitting is because of the piping tip you were using. It's straight and open at the end, and I've always had more luck with the closed tips that are kind of rounded (a Wilton 2D is the best for churros). Either way, these look great!
Hi Tammy :) Usually, before you mix the eggs into the dough, you have to return it to the hot stove and stir it around for a minute or so. This "burning" of the dough will strengthen the gluten linkage from the flour and will make a much crispier outside of the Churro and it will stabilize the dough. And most likely, it would have prevented the Churros from splitting, while deepfrying them.That process is typical for this kind of pastrydough, it is also used in Éclairs, for example. These look fab though, and I'm sure, they're delicious! :)
My son loves churros and we both love rainbow so this will definitely be a fun thing to make. I think the split is coming because when you rolled the colors together you can see a little gap in the center like an air bubble. Even though you lightly pressed it together, some air probably stayed trapped

I want to make churros without the added color. Me trying to pipe dough into oil is a disaster waiting to happen. I'm wondering if you take a small cookie scoop and make dough balls to fry. I'm thinking churro donut holes. I would be cool if you could try this!
The dough split because you needed to keep it on the heat for another 3/4 minutes to cook the flour (until it doesn’t stick to bottom anymore), add the eggs one by one as well instead of all at once!
churro dough is the same a choux pastry all you do different is fry the dough instead of baking it. Also I would never add all the egg in at once as sometimes flour doesn't need all the liquid which is required as different brands and types of flour absorb the liquid different.

Hey Tammy long time fan here i find a tablespoon of shortening helps stop the splitting with my choros if that helps ^_^
