- I love crab cakes and if it’s on a menu, i’m ordering it! They’re not too hard to make so here’s how you can make them at home.

Recipe
Ingredients
- 120g mayonnaise
- 1 tbsp Worcestershire sauce
- 1 tsp old bay seasoning
- Small handful parsley, chiffonade
- 1 tbsp chilli sauce of your choice
- 450g picked crab meat
- 1 egg
- 1/2 cup panko bread crumbs
- Salt to taste
- Oil for shallow frying
Method
1. Start by mixing the mayonnaise, Worcestershire sauce, old bay, parsley and chilli sauce.
2. In a separate bowl, mix the crab meat, egg, panko and salt.
3. Add the crab to the mayo and fold through, trying not to break up the crab meat anymore.
4. Roll this mix into 8 crab patties
5. In a skillet, add 1/2 cm of oil over med-high heat.
6. Pan fry the crab cakes until golden brown on both sides.
Ingredients Mayo
- 125ml olive oil
- 125ml grapeseed oil
- 1 tsp dijon mustard
- 2 egg yolk
- Juice of 1 large lemon
- 2 tbsp water
- Salt to taste
Method
1. Start by adding the oils, juice of 1/2 a lemon, egg yolk, 1 tbsp of water and the mustard to a tall glass or container.
2. Place your stick blender at the bottom of the container and turn it on. Slowly bring it to the top, being careful not to split the mayo.
3. Once you have emulsified all the oil into the yolks, check how thick it is, and if it's too thick, add the other tbsp of water.
4. Add a pinch of salt, blend once more and then check for seasoning, both salt and acidity. If it needs more acid, simply add the other half of the lemon.
Ingredients Tartare sauce
- 125ml mayonnaise
- 40g diced capers
- 40g diced shallots
- 40g diced cornichons
- Zest of half a lemon
- Small bunch of dill, finely cut
Method

I grew up in Maryland, a US state known for its crab cakes and blue crabs. It's actually where the Old Bay spice blend comes from (It was originally made in Baltimore before McCormick acquired it). It's a huge part of our local culture and most of us tend to be purists who dislike excessive filler. As someone who is generally judgemental on this particular subject, I have to say you did a very good job. Props for making homemade mayo. It's such a simple thing and it does make a difference. I will preface the following suggestions by saying that not everyone in MD makes theirs exactly the same way and many people are super opinionated (and in some cases secretive) about their preferred recipe. With that in mind, here are a few differences in how many of us Marylanders approach ours:
-We use blue crabs which are smaller but have have an amazingly buttery and sweet flavor. This is a must. Fresh crabs (like you used) are best but if you are buying pre-picked crab meat the best is jumbo lump if you can afford it.
-We would definitely omit the chili paste. Truth be told though, chili paste in crab cakes sounds delicious.
-Many of us prefer to used crushed crackers (such as saltines) rather than prepackaged breadcrumbs. The crackers are less crunchy and have more flavor. If anyone wants to try this method, keep in mind that the crackers are salted and adjust your seasoning accordingly.
-We most commonly (but not always) bake ours instead of pan frying. We form them into a ball rather than a patty. Some folks brush theirs with a little butter before popping them in the oven.
-We tend to pair ours with some fresh squeezed lemon. Some folks do use tartar sauce or coctail sauce, but it really doesn't need it. In my opinion, the lemon adds a little acidity and brightness that doesn't distract from the crab, which is the main star of the show.
If you ever want to try making our style of crabcake I'd be really interested to see what you think. I'll admit that I'm biased when I say they're the best. Just be prepared... if you say its a "Maryland" crabcake you'll have a state full of Uncle-Roger-type personalities coming for you. I'm risking life and limb just by making this post. My bestie lives in MD and I agree, Marylanders know how to make crab cakes and red cream of crab soup. I also so the MD version of cream of crab soup too.

Yummy on the blue crabs. I’ve had them in Maryland (and have the mug to prove it;)) We have a Chinese restaurant here (nyc) that cooks up a whole mess of them then serves them up piled in the middle of the table with the various accoutrements to crack and pick away at them. So good .. We get gorgeous blue crab crab cakes locally here too. I do like to add a bit of fine diced hot pepper in my recipe - a habit I picked up from having delicious crab cakes in the Caribbean (they use a different crab though) cheers!

I live very close to the Eastern Shore of Maryland. To hear Old Bay in the recipe made my heart sing. Suffice it to say, any “ Good Ole Boy” raised on the Eastern Shore knows how to crack and clean a crab. Blue Crabs are smaller and sweeter than other crabs, oh are they good!

I was on a Coast Guard buoy tender out of Astoria Oregon and we worked the buoys from the Canadian border down to the edge of California. We would anchor over the job site while the buoys were either replaced or refurbished on the spot. I built three Dungeness crab pots out of bread racks and put them over the side for the duration of our stay. I kept the large males and everything else went back in. I'd pick the crab meat and make either crab louies or cakes. Nothing beats fresh crab for quality of eating. Now that I live inland I use red king crab legs for cakes and they're superior, expensive, but superior. I have all-you-can-eat king crab parties with cakes and ice chest full of legs, drawn butter, corn on the cob, fresh made cole slaw, dessert, and ice cold beer and wine aplenty. You only live once so it's worth the cost. Eat, drink, and be merry because it's later than you think... I always say.

Unless you're from Maryland. Virginia may be for Lovers, but Maryland is for Crabs
East Coast Canada, cold ocean, no crab, West Coast Canada, Crab but no Lobster. No crab here and we love it
So couple of tips to add if I may. Once you formed the crabcakes, put them onto cut pieces of parchment paper. This will help when picking them up. Also put them in the freezer for 20-30 mins before frying to firm them up.

On the west coast of Canada we'd use Dungeness crab, but it's expensive... a special occasion thing, unless you catch it yourself like my uncle does. When I don't want to "shell" out for crab, I've used basically the same method with a good quality canned salmon and they turn out fantastic. Comes together in 20 minutes, family loves them. Cheers!

Living in Oregon we are very spoiled with Dungeness crab. When i was younger we wouldtoss in the boat and crab a few times a season. So delicious.
Had some delicious crab cakes at Mo's on the river a few years back,and the best Tuna melt ever, can't wait to get back up there.

Glad to see that you use Old Bay and pan fry the cakes! Never had mud crabs. We use blue crabs and crushed saltines instead of panko. BTW, a good crab cake doesn’t need a sauce 😮

hi andy, very simple.... hot water put in the whole crab, and leave it for some time, the complete meat will be tight then open the hard part slowly no meat loss only the hard part u can remove slowly and easily. The same is applicable to prawns also. please try once & share ur feedback.
