Beautiful & Delicious Holiday Treats: Italian Butter Cookies

  • These Italian Butter cookies taste so much better than the store-bought variety. So buttery and delicious. They’re perfect for the Holiday cookie table and for gift giving. The best gifts are made with love. Follow this easy recipe and make a few batches this weekend!

    Ingredients
    12 ounces unsalted butter, softened
    1 cup of granulated sugar
    2 eggs, at room temperature
    3 and 1/4 cups of all-purpose flour
    1 and 1/4 teaspoons baking powder
    3 teaspoons vanilla extract
    1/4 teaspoon salt
    Fillings and Toppings:
    semi-sweet chocolate, melted
    white chocolate, melted
    jam
    sprinkles
    shredded coconut
    sliced almonds
    Instructions
    Preheat the oven to 350 °F, 180 °C.
    LIne 3-4 baking trays with parchment paper.
    In the bowl of a tabletop mixer that has been fitted with the paddle attachment, add the butter, sugar, and vanilla extract. Beat until fluffy. Scrape down the sides of the mixing bowl.
    Add the eggs one at a time and beat until fluffy.
    Combine the flour, baking powder, and salt in a bowl and whisk together.
    Add the flour mixture to the mixer in a few batches while it is mixing at low speed. Mix until just incorporated.
    Fill a pastry bag that is fitted with a large star tip halfway full with the cookie batter.
    Pipe 2-3-inch long strips of batter or rosettes onto the baking trays. Leave about an inch or two in between each cookie.
    Bake for 10-15 minutes or until the cookies are golden around the edges.
    Cool completely.
    Fill the cookies with jam or melted chocolate. Chill in the freezer for 10 minutes so that they can set.
    Dip the cookies in your favorite toppings and allow them to set completely.
    Serve with tea or coffee. Enjoy!
    Notes
    If you're melting chocolate chips, once they're melted thin the chocolate out using a few tablespoons of vegetable oil.
    Store the cookies in the freezer or in the refrigerator.

    I just made these cookies with a friend yesterday!!! 95lbs of dough.. which is a family secret... and here you come to the rescue.
    They use margarine & butter.. that much i know. I must watch yours.. for you never disappoint...love it..ty!!!!!

    Good morning. What size pastry tip do you use? I know you said a 1M or 2D but I think I used one that was too big. My cookies spread and the shape wasn't as pretty as yours. These cookies are so pretty.

    I highly recommend the Mercato cookie press. It's made in Italy. Great for those who have arthritus or need to bake up a batch quickly.

    Love these cookies. Do you ever let them set in the fridge for a time before baking as to keep dough from spreading.?I had that experience with a different channel .. I look forward to baking this recipe. They look delicious!

    I made these cookies with my daughter (first time piping) and they were fantastic tasting, although even misshapen, they still looked great.     I love y channel, thank y f sharing. Please, make a video on how to make those LG hard Italian bakery style sugar cookie. I make them and they are never hard like the bakery. I used to go to this bakery. However, the front desk got snobby and they charge extra when I use my credit card. I rather make them at home.     Thanks for sharing your recipe Dimitra🤗 Melting the chocolate and keeping it at the right consistency has always been my major problem when decorating. I'm aware of adding a little vegetable oil but does this let the chocolate set?

      Vegetable oil does thin out the chocolate but that's correct, it sets a bit softer. The best chocolate to use for this is a baking bar or chocolate wafers. They melt smooth and thin unlike chocolate chips which melt and become too thick to use as a coating. Hope this helps :)

    Do you have to use a piping bag I would rather just roll them out into small logs and mark with a fork and then bake . Look forward to your response

    Tip: Stephanie at Joy of Baking puts a dollop of dough under the sheet to keep it from sliding around when we are piping or pressing the cookie dough onto the sheet.

    I love your opening music!!! Many years ago I used to have a machine that made these cookies and my children loved to pipe them out on the cookie sheets - super easy to use - but I can't remember the name of it. It was a kit with a lot of different tips and I used this every Christmas!! I think I bought it at Ace hardware.

      @@DimitrasDishes And it was so easy to use - just put the dough into the tube part - screw on the lid - and then turn the tip and out come the cookies - fast and easy and absolutely great and fun to use! I hope you can find one - I can see it in my head but can't remember the name to save my life. Ha Ha Ha Ha I wish I still had that kit.

    Hello Dimitra. I've made these cookies several times now and each time they turned out delicious. Thank you for the recipe. The only issue that I've run into each time is the dough turns out somewhat stiff, it does not pipe as smoothly as yours in the video. I made them again this morning and the same issue, even though I let the butter get very soft, warmer than room temp as I put the butter in the oven with the light on to get softer. Do you have any suggestions.

      This is a very common problem. Try adding less flour. Maybe a half cup less and pipe them out as soon as the dough is made. It hardens as it sits. Let me know if that helps :)

    Did you sift the flour prior to measuring? Have you thought about lifting the parchment paper and placing the entire baked cookies onto cooling racks? (that means, that you would need to replace the parchment paper on the pan for the next batch) ... Is that an option???

      Yes they are! They're international but here in the states, I grew up knowing them as Italian butter cookies... These are way better than the ones sold in bakeries. You're gonna love them :)

    I made them! They turned out great. Question, does it matter if u use kosher salt vs table salt? You're right, the best are the jam stuffed, dipped in white chocolate.

      Yes, they can be frozen for 2 weeks :) Make sure that they're in airtight bags or containers so that they do not absorb freezer odors. Delish!!

      So, they should be piped immediately after making the dough otherwise it begins to quickly harden. You can microwave it for a few seconds or add less flour, maybe a quarter cup less no more than that otherwise they won't hold their shape.. Hope this helps

    I just paid an obscene amount of $ for a 2 oz bottle of vanilla. I've never seen vanilla in large bottles like you use in your videos. Where do you get it?

    i just made these cookies on 12/25/21 and everything was great until I baked them. They lost their shape and baked flat. I compared this recipe to others, and most other recipes use only the YOLKS (this recipe calls for 2 eggs mistake). Unbaked dough was great but in the oven came out flat so disappointing. Also recipe states bake time 10-15 minutes, but mine took over 20 minutes to become slightly golden brown. It was fun and cookies taste great, will make again.

      Might try putting cookie sheet with cookies in freezer for a few minutes before baking.

      Your dough probably became too warm refrigerate your dough next time.

      Not enough flour. You can add a little more flour and that should fix the problem. Keep in mind though that it will be stiffer (the batter) and harder to push out of the piping bag. It's important to make the cookies right away because the batter gets stiffer as it sits. Hop that helps! Also, chilling the cookies in the freezer for 20-30 minutes before baking will keep them from spreading too much.
