    INGREDIENTS
    80g boiled potatoes
    60g boiled carrots
    60ml sunflower oil
    (15ml) 1 Tbsp rice milk
    1 Tsp garlic powder
    ¾ tsp salt
    2 Tsp arrowroot / tapioca
    1 tbsp nutritional yeast
    Pinch of black pepper
    1 tbsp Lemon juice
    4 slices of bread

    I've made this potato/carrot/nutritional yeast cheese, and my 5 years old nephew loves it! He didn't realized that it wasn't real cheese and alwas asks me to make more.

    I had a sandwich maker YEARS ago and I had forgotten how awesome they were! Now I have to get one for my children to enjoy their sandwiches! Thanks for the reminder you two:). By the way I love the cheese sauce. I make ALOT of it and we add it to many dishes!

    In the Netherlands we are all addicted to "tosti's" (as we call them). I think it is impossible to find a student without a sandwich maker. Even some universities/schools have sandwich makers available for students (and teachers) to turn a home brought simple cheese sandwich in to a tasty tosti for lunch. When I went vegan, I sold mine. But... I really should try your toasty version! It makes me think back of all good times when I was a kid and a student. I think I'll use a pan with lid instead. And when it is as tasty as it looks, I'll buy a new "tosti ijzer" toasty iron/sandwich maker.

    To get that crimped look all the way around, you could rotate the sandwiches halfway through the grilling time. To crimp them crisscross and makes for easier slicing and a better presentation, you could even slip half a slice of tomato.

    No idea why I've been recommended this video 5 years after the fact, but here I am.
    I've actually come across some pretty great melty vegan cheeses, but they're absurdly expensive. This seems like a great alternative.

    Hey Dave and Steve--I make your recipes all the time and they're always great!! I also have both your cookbooks. I have a couple of suggestions for this recipe (to make it a bit healthier) because I make something similar. First, instead of the 1/4 sunflower oil (at 482 calories), you can use 1/4 cup cashews (at 170 calories). It will be just as creamy and (the calorie difference nothwithstanding), the oil from the nuts is healthier than extracted oil. Second, from all the vegan cheese I've researched, you're apparently supposed to cook the cheese mixture if it contains a starch or it will be grainy. I'd suggest cooking the mixture in a saucepan until the cheese turns shiny (an indication the starch has cooked). Cheers! Sile H.

      I don't think that it's necessary to cook the mixture beforehand, because it gets heated up in the toaster anyway...

    I make a very similar cheese sauce but I add banana peppers to give it a bit of a kick. It's soooo good on macaroni or as a dipping sauce for pizza!

    Hiya guys, Tesco own brand smoked vegan cheese (and their other cheeses) melts and is great for a short cut melting cheese. I think yours looks much healthier and I think much cheaper in the long road. I bought one of your books and have made so many of the dishes with great success! Also side note the cauliflower and pea Korma is the best 😊

    Just made and ate this. Had it on a floury soft roll with onion heated under the grill.... delicious! Super melty and full of flavour. Definitely will be my cheese and onion fix in future. Better than the real thing. How long do you think this should last in the fridge?

    Oh my goodness! And I thought you were just two pretty faces. You're talented and pretty faces! That sandwich was actually good I made the recipe. Incredible!!! I am on a salt restricted diet so I replace some of the sodium with vinegar and lemon juice and a little bit of Tabasco sauce so I could go without adding any additional salt. Again that sandwich turned out shockingly good. Thank you very much for the recipe. I need to buy your book and see what else you got going on

    Fab guys i cant wait to try it!...Went vegan/WFPB last November( with the occasional "slip")And you've both made it a lot easier as some ingredients are difficult to get here in Cork, e.g.. like those to replace tastes and dishes I've enjoyed in the past... especially - cheese - I've just recently got some agar agar powder..(hard to get here in 'the Oul Sod.' ) Any chance you'd do a cheese with that please? And maybe some jelly desserts with it too? Love ye're channell and book - The blue one! Hope to visit yere premises in Wicklow soon. Thanks again.
