Pits & Spits are a old time BBQ company in NE Houston. They make some of most high end BBQ pits and smokers. You buy one of these and you can hand it down to your grand kids. They are not cheap but they are made in Texas.
I would think it would be very similar to how I cook it in the smoker. Try 275 for an hour and check with a meat thermometer to see where it’s at. Then bump it up to 325 until done!
Great Presentation on how to make that delicious dish! Me personally, I would have added some jalapenos, homemade crispy bacon bits and pepper corn as well as the rest of the ingredients you added! Other than that, the dish still looks delicious.

I cooked it for 90 mins on my Kamado Joe and the bacon on the inside of the roll wasn't quite done. It was probing at nearly 200 degrees internally. Is that normal for the most interior bacon to not quite be fully cooked?

Was wondering about that. Thought I might try just making the sausage roll and then wrapping in the bacon weave..no bacon inside the sausage.
