I would like to share some experience with you to help you become the best you can be. For example when you use your Chef's knife put you finger and thumb in front of the handle on either side of the blade. This put's your hand into the balance point of the blade and is ergonomically more comfortable. It would be awesome to do a show with you sometime you really know your stuff and HEB rocks!!!
How long do you cooked them in the oven?? I don't have a smoker
