Great recipes! I'll try some for sure especially that hot weather coming here again. In Poland we have one very popular cold soup. It's Chłodnik. Maybe someone will be interested ;) INGREDIENTS 4 or 5 young, tender beets, with tops if possible 1/2 teaspoon salt 2 cucumbers, peeled and grated 6 radishes, grated 3 tablespoons fresh dill, chopped 2 green onions (white and green parts), chopped 4 cups plain yogurt 4 cups kefir or buttermilk 1 cup sour cream salt and pepper, to taste 3 hard boiled eggs, quartered Get Ingredients Powered by Chicory INSTRUCTIONS Prepare the beets by removing and dicing the stems up to the leaves Add the chopped stems to a large soup pot Peel and grate the remaining beet roots, add to the pan Add enough water just to cover the beets, add salt Simmer until tender, about 15 minutes Cool the beet mixture Add the cucumbers, radishes, dill, green onions, yogurt, kefir, and sour cream. Season with salt and pepper Chill and serve garnished with hard boiled egg.
Wow! I made variations on the gaspacho and the cucumber avocado "soups". Eating them now with crispy flat bread that I put in the microwave. Super quick and delicious. Thank you so much for posting them!
Saw this; then from eyeballing the quantity; followed through on the Gazpacho recipe... the only difference is that I added in some herbs but IT IS SOOOOOO DELICIOUS😍 highly reccomend😍
The technique for gazpacho is using that clear ice you have to buy. The ice change the texture and color just like that technique chef use called "clarifying or Blanche in french" they use for any vegetables to give them body color and texture. So use ice for gazpacho that's how they do In europe

The idea is that you can actually drink it, or eat with a spoon, whatever you prefer, if it is too dense that isn’t possible. Also, traditional gazpacho has a bigger base of tomato, and not as much cucumber, but that you could do to taste. If you want something denser, try salmorejo, it is similar but has a lot of bread to make it denser, and it is delicious when served with some hardboiled egg and serrano ham sprinkled on top.

What you made is actually salmorejo, not gazpacho, which is just a thicker version of the drink. Gazpacho is meant to be drank.
