Won Ton Lasagna Cups

Won Ton Lasagna Cups (with Plant Based options)
Mozzarella Cheese (Miyoko's or a plant based Mozz cheese)
Chopped parsley
Cottage Cheese (Miyoko's or a plant based Cottage cheese)
Your favorite, or leftover spaghetti sauce (with Impossible Beef for Plant based)
Fresh spinach
Won Ton Wrappers (these are plant based)
Top with grated Parmesan (or your favorite vegan parmesan)
Bake at 350 Fahrenheit for 25 minutes.
Trim corners off if you don't want the crunchy tips.
Serve as finger food or serve in a puddle of spaghetti sauce.

Oh yes, a cucumber salad would be really refreshing with this and add a lighter aspect to the side! Great idea! Or even marinate mushroom halved, cherry tomato halved, and thin cucumber slices in red win vinegar, olive oil, sugar, salt, garlic then make little toothpick side snacks with them for the finger food version. Now I gotta try that. ☺
