Not your Grandmas Apple Crumble. These Apple Crumble Baked Oats are not only delicious and comforting but also extremely good for you. Gooey cake like oats with a sweet apple filling and crispy crunchy walnut and coconut crumb. Eat for breakfast, a snack or dessert.
Full recipe -
Base:
3 cups of oats
2 tsp baking powder
1 tsp cinnamon
½ tsp nutmeg
Pinch of salt
2 cups of almond milk
Filling:
4 apples of choice
2 tbsp lemon juice
1 tsp cinnamon
1 tsp vanilla extract
2 tbsp maple syrup
Crumb:
1 cup of oats
½ cup desiccated coconut
1 tsp cinnamon
4 tbsp butter
½ cup Walnuts, chopped
Preheat oven to 180°C/350F
1.Mix together the base ingredients and press into a greased baking pan.
2.Chop apples into small cubes and toss with lemon juice, cinnamon, vanilla extract and maple syrup. Scatter over the top of the oat base.
3.Make crumb by mixing together oats, coconut and cinnamon. Chop and add the butter, use your fingers to make crumbs. Mix through the chopped walnuts and then sprinkle over the top of the apples.
4.Bake in the oven for 30 minutes. Let cool for 10 minutes before slicing and serving. Top with cream/ice cream.
