- Eggplant parmesan is my dad’s absolute favorite dish. The crispness of the baked eggplant, paired with a wonderful homemade marinara sauce, covered with a flavorful vegan parmesan, and sprinkled with some fresh basil, this is definitely a family favorite.

Made this tonight and it came out great! I never knew a simple batter of flour and water worked as a great pre-coating for breadcrumbs!

Ooh Eggplant parm. I haven't had this in a long time. Come to think of it, last time I had anything close to this was at a fair 3 years ago when they debuted their "Eggplant Fries". Not sure why I haven't revisited this dish. I guess I'll have to add it to my ever growing list.

Nicely done Ani, if you want a gluten free batter, you can sub chickpea flour with a bit of nutch instead of flour.
