Swordlord + sword saint magus (saint gets a dodge bonus from Intel) works very well, sword saint also only uses one weapon type and gets it at the start so dueling sword proficiency is basically free. It also as a human and a magus gets allot of extra feats (half of magus levels are counted for bonus as fighter traits) It makes a great buffer/debuffer as well.
Humans are very good, particularly for new players because they start with a +2 bonus to the stat of your choice and most importantly a free feat. Since feats are only given sporadically the extra feat at the start can allow for much better progression later on
Since Aldori Defenders are able to use Heavy Armor they can definitely use Full Plate. Dex does not have anything to do with it. Yes your Dex bonuses are mostly nullified by using Full Plate, but there is nothing stopping you from using it if you want

You mentioned no full plate as a rogue base. As a dex aldori defender, you won't have full plate either.
