I made this. So delicious. After I fry, I put them in ziploc bags in the freezer so I can grab 1 or 2 pcs when I need a snack. So yummy in sticky rice or alone.

This seems like its done with lactic acid. You need a powder to promote the fermentation. I would also like to see her recipe. You wrap it tightly to remove air. I’m scared to try it myself. Cured meat is like that.

I made this but I do not have a dehydrator or a food drying rack to protect it from flys. So I left it in my grill outside with the cover down. Its been 2 days now and almost dry. Is it still good to eat?

How about heating it back up? Do u put it back into the oil? Or do you put it in the oven?
Oven on low and adding into oil to reheat is ok but keep eye not to overbook or burn it cuz they are already dried/ baked by the sun.

Jerky need to be semi-dry and
Flexible so when. You fry it will taste better
You can also dry it in the oven on low heat

Jerkies, as I know, is always eaten raw (NOT cooked).
For Lao jerky , they have never dry it completely like American jerkys.
They stopped the drying process when the meat is semi-dry and pliable
