Chelsea Bun RECIPE:
100 g warm milk (total milk 200 ml).
7g dry yeast.
1 teaspoon total sugar (20 g).
stir.
Let rise in a warm place for 20 minutes.
Add remaining milk 100 ml.
Add the remaining sugar to the yeast mixture.
1/2 teaspoon salt.
Add 1 egg.
Mix well.
Sift 400 g wheat flour.
Knead the dough with a spatula.
Put the dough on the table.
Mix well.
Add 70 g soft butter to the dough.
Mix well.
The dough should be soft and elastic.
Form a ball from the dough.
Lubricate the bowl with vegetable oil.
Put the dough in a bowl.
Cover the dough with cling film.
Let the dough rise in a warm place for 1-1.5 hours.
75 grams of raisins.
75 g candied fruit.
Grate the zest of an orange.
Grate the zest from 1 lemon.
Mix everything.
The dough has risen well.
Put the dough on the table.
Form a ball from the dough.
Cover the dough with cling film.
Let the dough rest for 5 minutes.
Roll out the dough into a rectangle.
The thickness of the dough is 3-5 mm.
Lubricate the dough with soft butter.
Sprinkle the dough with 50 g cane sugar.
Sprinkle the dough with 5-7 g cinnamon.
Put a mixture of candied raisins and zest on the dough.
Roll the dough into a roll.
Repeat after me.
Cut the roll into pieces.
Place the buns on a baking sheet lined with parchment paper.
Press on the buns.
Cover the buns with cling film.
Let the buns rise in a warm place for 45 minutes.
Brush buns with milk.
Bake the rolls in an oven preheated to 200 °C for 20 minutes.
4 tablespoons of water.
6 tablespoons of sugar.
Mix everything.
Bring to a boil.
Boil the syrup for 1-2 minutes.
Remove syrup from heat and set aside.
Lubricate the finished still hot buns with sugar syrup.
A very simple recipe for sweet rolls!
