Amazon has both red and black sorghum. I can't verify the quality as I haven't ordered them yet. The black is even fairly cheap per pound if you are willing to buy a huge quantity with 50lbs costing a little less than $3 per pound. Red is crazy high though at almost $7 per pound. This is in march of 2024.
Sorghum is a very tasty grain. Also called milo. I discovered it a few decades ago when looking to get more variety for allergy management, I was able to get milo flour and milo meal which basically can be used just as you would use corn flour or cornmeal.
Also later I was able to get the delightful tiny popped sorghum, which is delicious and great for anybody allergic to corn who is missing popcorn. I see it sold at Amazon both pre-popped and as the unpopped kernels. If you want to try popping sorghum yourself, check out online recommendations for how you need to do the popping. The kernels are so tiny that it's hard to contain them, so not all popcorn poppers will work well for them. An air popper is not recommended, for example.
Vegan Rob has a line of puff snacks based on sorghum instead of corn that are very tasty (and also dairy-free, which is important for me). The line has different flavors with different veggie powders. The only one I don't like is truffle-flavored (maybe those are chips, though).
Sometimes I see sorghum listed in other types of vegan foods I run into also, so it's catching on.
Millet is very tasty also. Lotus Foods even has rice &millet ramen. Millet is just as easy to cook as white rice, basically the same instructions, although it is whole grain.
I don't think I've run into the non-white sorghum either. Maybe somebody should ask Vegan Rob about potential sources.

Is it only used as a flour?
@@barbarar5869 obviously as flour for breads, its used in less ground/cracked form for other food items such as meal bowls and salads.

Sorghum grain has very high Amygdalin content. It also has other cyanide producing compounds. Research says cyanide from Sorghum sprouts reaches fatal levels. Therefore, even for unsprouted Sorghum grain, it is important to know the level of risk of cyanide toxicity from regular consumption, as it may not be zero. Would be appreciated if you can provide information and analysis on this aspect, and on the tolerable limits for unsprouted Sorghum grain consumption.

How's it compared to Ragi? (Finger millet). I wonder how much of the micronutrients are destroyed during heat (making flat bread/pancakes).

Its sad for all the species that we pointlessly make suffer to arrive at conclusions about foods and treatments for disease when we know little of it transfers to what arises in the case of humans.
I bought some to pop. It popped poorly. I then tried to boil some but did not like it. Then I dumped it in the yard for the birds.
Check instructions online for sorghum popping techniques. The type of popping device matters because the kernels are so tiny they will fly around if you use some devices such as air poppers. But some people have found successful ways to pop the little guys.
You do have to buy popping sorghum, just as you have to do with popcorn. Just the regular grain is not likely to do anything.

If it matters, Amazon profits from foie gras.
Check out the black. They have it even cheaper than the red if you are willing to buy 50 lbs. However, only one person has rated the supplier so no way to know if it is quality.
Where did you find it?
I can only find one organic red sorghum product on Amazon and it has poor ratings. The other is non-organic and you have to buy a 50 lb bag!
I would really like to find a new sugar substitute after discovering brown sugar is 90% white sugar with a little molasses. So which is least bad for you, sorghum syrup, honey, black strap mollasses, date syrup?
I don’t know for sure but I’d say date syrup because I think it’s made from the whole date with nothing added.
Dr Greger’s recipes in his How Not To Die Cookbook use date syrup, including a recipe on making it.
D galakatose is the Powder you need(but not the cheap industry powder from China)
Use date paste or date sugar.

Replacing meats and dairy with beans has helped me immensely. (If you don't like the Good Doctor's advice, there are tons of other websites you can visit and complain about.)
