**Room temperature is around 75-78F/24-26C - after 2 sets of SF 3 hours or longer fermentation until 70-80% rise. If the room temperature is higher or lower the fermentation time can be shorter or longer. Preshape, final shape, cover and let sit at room temperature for 1 hour & bake. **
* Preheat at 450F/250C with pan in.
* Pour hot water in the pan.

* Reduce heat to 430F/220C and bake 20 minutes with steam.
* Reduce heat to 400F/200C and bake another 20-23 minutes until internal temperature 200F/95C.

***실내온도 75-78F/24-26C 2번 펴서 접기한후 3시간 거의 70-80% 부피가 늘도록 발효해요.

You can use regular sourdough bread dough which is nice and easy. You can also make it with filling of your choice.
I steam baked whole time to avoid burning. I just changed the oven temperature twice.
