**Room temperature is around 75-78F/24-26C - after 3 sets of SF 2.5 hours or longer fermentation until 80% rise. If the room temperature is higher or lower the fermentation time can be shorter or longer. Shape, cover, let sit at room temperature for 2-3 hours until the dough reaches 90% of pan & bake.**
Bake in preheated oven at 375F/190C for 37-40 minutes until internal temperature 206-209F/97-98C golden brown.

63g strong starter
63g bread flour
24g water
Dough ingredients:
150g prepared stiff starter
285g water
320g bread flour
50g dark rye flour
25g honey
4g salt

**실내온도 75-78F/24-26C 3번 펴서 접기한후 2.5시간 거의 80% 부피가 늘도록 발효해요. 만약 실내온도가 높거나 낮으면 발효시간이 짧거나 길수 있어요. 덮고 실내온도에 2시간 반죽이 팬의 80% 부풀때까지 둔후 빵모양 만들고 실내온도에 2-3시간 팬의 90% 부풀린후 구워요.**
예열 오븐 375F/190C 37-40분 빵속 온도가 206-209F/97-98C 황금색으로 구워요.
