- In today's video I'll try to create a weekly gluten free budget challenge for 2 people for $25 per person. Join me for a Walmart grocery haul and see what I come up with to save money this week on groceries.

*use bouillon if you are on extreme budget

TOTAL = 52.51 / $26.25 per person
Add 1 more GF wraps or a loaf of bread if you are worried you won't have enough food.
EXTREME GROCERY BUDGET
*cut out meat, substitute 2 lb bag of dry beans for both canned beans. Use beans in place of meat. Use pantry bouillon instead of chicken broth. Use frozen corn instead of fresh. Skip avocados.
MENU
BREAKFASTS
2 oatmeal breakfasts - with 1/4 diced apple
2- migas with 2 eggs and 2 shells-chopped jalapenos, onions, tomato -used 1/4 avocado
2 meals of 3 oatmeal crepes with banana, 2 eggs, plus oat flour
1 oatmeal bowl with spoon of peanut butter DRIZZLED ON TOP, 1/2 SLICED bananas
LUNCHES
3 lunches with 2 turkey rolls with rice paper wrap, turkey, lettuce, mayo - 1 with 1/2 apple, others with 1/2 banana
1 3 bean tacos w/Rosarita refried beans, lettuce, tomato, onions, pepper jack, corn tortillas
1 lunch with 2 egg salad roll ups with one egg each wrap, lettuce, mayo, mustard, paprika, salt
1 serving 2 peanut butter roll ups WITH GLUTEN FREE TORTILLA and 1/3 sliced banana
1 pulled pork bowl with seasoned red rice, lettuce, avocado, corn salsa, jalapenos
DINNER
7 dinners with 2 carnita tacos each, 2 shells each with onion and cilantro - add rice on side if desired. Season rice with chicken bouillon
1- 3 pork taquitos with corn salad with guacamole made from 1/2 avocado
1 egg fried rice with mixed vegetables with 1 egg used
1 black bean and rice burrito with corn salsa and guacamole, lettuce, onions, jalapeno
1 BLACK BEAN TOSTADA WITH BLACK BEANS, TOMATO, LETTUCE, ONION, JALAPENO
1 Dinner 2 bowls of black bean and corn salsa with 1/2 green pepper, 2 tomatoes, jalapeno, ONION, garlic SALT plus zest of lime and 2 tortilla shells -used 1/2 avocado
SNACKS
1 cheese quesadillas with corn salad and rice
1 cheese quesadillas with corn salad and rice
SLOW COOKER PORK CARNITAS

One of the comments suggest doubling all spices except the salt and cinnamon. After making it, I agree. I omitted cinnamon.
CORN SALAD
5 ears corn shucked - or use frozen bag of corn
½ bell pepper
½ can drained and rinsed black beans
1/6 of sweet onion - use onion at your own risk. Mine was very sweet
1/3 cup chopped cilantro
2 diced tomatoes
Olive oil
Lime juice of 1 lime
2 tablespoons apple cider vinegar -red wine vinegar would work also
Salt and pepper to taste
*I added diced avocado immediately before eating one of the meals, but don’t add to the entire mixture
Oatmeal Crepes
½ cup oats blended to a smooth consistency like flour
1 egg
¾ cup water
1 tablespoon olive oil or whatever oil you have
Dash salt
½ banana
Blend oats first into fine powder. Add rest of ingredients. Blend until smooth. Fry in lightly greased pan. Try to make as thin as possible. Makes 3 crepes.
FOOD LEFT OVER = Left over =9 eggs, most of frozen veggies, 1/2 cup dry rice plus 3 cups cooked white rice, 1/3 of green bell pepper, 1 jalapeno, 17 rice paper wraps, corn salad, 2 GF tortilla shells, 58 corn tortilla shells, 3 romaine heads of lettuce, 1/2 of onion, 8 servings oatmeal, 3 tomatoes

Being a Celiac , this is the only way I can eat .A lot of ppl dont realize that gluten free diets are really expensive . And there are some of us that are not just gluten free but I happen to be on a gluten free and on a kosher diet and cant have any processed foods either . . Mine is due to allergies from a lot of dif foods , so I sub in dif things . I love the GF tortilla shells from Mission .

Ruby, I can totally relate. I am gluten/dairy/corn/egg-free plus I have food allergies and texture issues. My sister jokes that I eat air. But my food budget has gone up by about $40/week. Way too much money to spend on food.
@@laurajackson1264 , I understand that cos as Celiac its harder than most people realize . And the only eggs I can have are the free range kind . I have peanut allergies and cant have tomatoes and any other type of food that has high acid in it including green bell pepper . Coffee makes me sick but am allowed to drink tea .
@@rubygreen158 yep. Of course, with my food allergies and texture issues, I've been dealing with that my whole life, but to be 99.9% G/D/C/E-Free took me about 8 months. I kinda cheat with butter. :)
My son is allergic to wheat and milk so it's definitely been a learning curve. And expensive 🥴

Be cautious of the tomato broth powder. It contains maltodextrin which is often made from wheat, therefore not gluten free.

Oh yeah migas we have it in my part of Tx alot of times chorizo is cooked in it but im in north Texas..its more spicy and authentic near the border.. honestly though just depends on who's cooking it

How did you keep the corn tortillas from breaking when making the taquitos?
I might have heated them up before rolling them.
It's important to note that some people with Coeliac Disease react to oats (I learned the hard way that I do). So if you're Coeliac, you need to decide for yourself whether you want to risk that.
My understanding of that is that we have to be sure that the oats are processed at an allergen free facility. For me, it's the difference between oats/water or oats flour. 🤔
@@laurajackson1264 Oats themselves have a similar protein structure (Avenin) to gluten, which is why 1 in 4 coeliacs react.
@@buffys3477 Again, oats have a protein called Avenin that is similar in structure to gluten, hence 1 in 4 coeliacs react to them.
Another great GF option is certain GF pastas some with a good bump of protein. Such as chickpea pasta.
Hi Kyndra 😁 I was eyeing one of those GF pastas for this challenge but ultimately decided to try it for my next GF video, because I was running out of money in the budget ☹️ Those GF products are mighty expensive! 😳 As someone that doesn't eat a lot of meat, I really like the idea of a protein packed pasta. I'm excited to try it.
Perfecto! What oil do you use when you are frying items? I make the mistake of no oil, but I can see when it comes to corn tortillas, that makes it another level! I'll quit eating bread for fried up corn tortillas you betcha. Then I might get off my arse and make my own as I scored a handmade wood tortilla press at the thrift store. You are my favorite budget lady!
Lately I have been using the spray avocado oil from Costco. I've also used Pam butter flavored spray in the past and just regular canola oil. Wow...thanks so much for the very nice complement 😁🥰 It's much appreciated. I've made my own flour tortillas but never corn. Hope you try the migas. They were very good!
Great recipes! Any time I get fresh corn on the cob, I always plan to make corn chowder because the cobs contain some great flavor that often goes unused. I'll often buy an extra two or three ears, or use a bag of frozen corn, to make a corn chowder to use as a side or lunch, or I'll add a half pound of peeled shrimp to make it a more hearty meal.
I've been looking forward to making a Jamaican corn chowder on my channel once we are further into fall. I LOVE corn chowder. 💜 This comment is making me want some now 😋

Amys canned beans are so good but not cheap at almost 4 dollars a can but they come straight out of the can easy to spread and just taste really good.

I'm not sure but you can get a lot more meat at H-Mart or Food City at Food City they have 4 different kinds of meat for $19.00 like chicken, hamburger, steak, pork I have bought it because of the food prices being so high and I could get 2 meals out of each kind and since it's only me and my Husband it works well they also have bigger cans of the beans you like I just can't remember the name and they have bags of fresh veggies starting as $1.50 they are a Mexican Grocery Store. At H-Mart they have the same kind of deal on meat you should check it out I live in Arizona

I have been trying to cut back on the amount that I spend on groceries just so that I can tuck extra money away for emergencies. These recipes all look great. I think I want to try the corn salad first. i’ll probably be picking up the frozen bag of corn just because it will be easier for me. I really need to find a decent Latin American market in the city where I live. That will help with the package of corn tortillas and some of the specialty ingredients like the tomato chicken bouillon. I am in Canada and our Walmarts don’t have the same huge package of corn tortillas or that bullion that are available in the U.S.
Just curious if it is @Foodie Justin who the (intelligent) tomato hater in your family. 😁. I love cooked tomatoes and if they’re marinated so like a bruschetta they’re okay. Just sliced up as part of a sandwich, or on a burger or in a salad, no thank you. PS for people who aren’t aware Michelle son has his own UA-cam channel and it is awesome.
Hello there 😁 Yes you are correct. It's Justin who doesn't like tomatoes. He's been taking a short break from filming, but I'm hoping he picks it back up. He made me the most delicious pasta dish last night. He made it with with half and half (because it was in the house) and San Marzano tomatoes, rotelle pasta and a little bit of mozzarella. I'm about to have some for my lunch at the office. You might check Walmart for the tomato chicken bouillon. And obviously if your Gluten Free then make sure its GF. Taco bell went out of business here 20+ years ago and the other Mexican places are a bit more authentic, the corn salad is one of the sides they serve, its very tasty and healthy. I use it as like a pico for beef mince taco and works really well, nice fresh hit. Taco bell recently came back here but still sucks when we have other real food. Im shocked at the price of tortillas in the US, here in Aus a 10 pack of the corn tortilla is around $3.50. I make guacamole the same way in the avocado shell, saves on washing up! Rice paper rolls can take practice, I didn't see you rip any so you're doing well. Great Video Michelle.

@@ArdentMichelle Recently bought 7 inch generic brand for $3.25 Canadian. A loaf of multigrain bread is $3.50. So bread is a better deal.
@@cheriemonami I watch a canadian youtuber and our dollar is about the same but things are way more expensive here, keep in mind I live in one of the most expensive cities in the world. They are from Nova Scotia. Weird in Canada that most packaging will be in both English and French and sometimes you use metric and sometimes imperial.

For a treat break one up a bit and throw it in very hot oil for 5 seconds. Lightly salt. They burn quickly so once they puff they're done.

Great ideas. You can make 5 gluten free wraps from 1 cup oats and 1 cup water. Soak and blend to a batter. Similar to the item you made without the egg.

Nicely done!! Heads up - oats aren’t gluten free unless they are protocol oats (which are WAY pricier) and things like seasonings & broth are often also not gf. GF can be SO EXPENSIVE!!! So expensive!!

Excellent choice skipping the GF bread! 😅 Also, the Mission GF cauliflower tortillas are my favorite so far. They hold together better than the original GF tortillas Mission makes.

I have a specific request and I totally understand if you don't do it, but I was wondering if you have any budget meal plan idea that don't involve any beans? My husband doesn't like them because of sensory issues (most mushy foods, really), but a lot of budget meals involve beans for the protein.

I watched your video on frittatas also. I had a little shredded beef leftover & put it in a freezer bag with onions & bell peppers to make a frittata later. I made too much chicken Parmesan & also put in a freezer bag to make frittatas later!! I always have eggs, cheese & fresh veggies. I bought broccoli cuts with a lot of stems that my son doesn’t like so I will throw those in also! I made one already & it was delicious! Thanks!!
Love this 😁 Frittatas can be made so many ways. I love that you're using leftovers in them. I'm pretty sure that's how the Italians make them too.
I can’t eat corn. But that’s my issue lol. Just as an FYI not all lunch meat is gluten free safe. Also oatmeal if it isn’t labeled gf can cause issues for folks. But otherwise Some good stuff here. 👏👏🧡🧡🧡
I didn't know that about the lunch meat. The GF oatmeal that I pointed to in the video with the caption "buy this" is the one I would want my GF viewers to buy. I accounted for the GF version in the video, but didn't want to ACTUALLY buy it, because I have lots of oatmeal at home. Thanks for watching ! 😁
Sitting here looking at her choices and feeling judgy lol. Those Mission tortillas are about $6 for 6 small tortillas, it takes 2 to make a decent sized burrito/wrap. Totally not budget friendly. The price of the pork was at least twice what it should have been when on a tight budget. Tempted to start doing GF/dairy free on a food stamp budget, been cooking this way for 23 years and realizing thats a huge skill to share.
Judge away 😂 The goal for me wasn't necessarily to be as low as possible on the budget, because time is also a commodity. The tortillas were $5.16. Are you making your own? Sometimes I make my own tortillas but only when doing the very extreme challenges. That's awesome that you're able to buy a pork shoulder roast for less than $7 where you live.
I would encourage you to start a GF channel to share your skillset because I'm sure it could help a lot of people. These kinds of specialty diet budget videos are much needed. 👩🍳

My husband is extremely sensitive to gluten and we found out there is gluten in broth! If it doesn't say Gluten free on it anywhere we are safe to say it is not good for him! I would check the ingredients in the broth and spices. Since they say made around other wheat products. We find it difficult sometimes :(

I have always enjoyed Migas, you reminded me to start making them again and I just used beans in the taquitos instead of pork and you had even more in store-like that delish looking corn salad! Hi Dana 😁 You may have missed it, but I explained in the video that I wasn't making the Tex Mex version. These were the Mexican version of migas and I kept my tortillas a little drier because that is how I like them instead of letting them get soggy in the eggs. Do you have a good Tex Mex version of Migas?

Thank You for all of your valuable videos. Our vet bills are hundreds of dollars a month from two cats that are older so your videos really help my budget & your ideas for yummy, less expensive food!
My dog costs me a lot too. 😞 The only thing more expensive than a vet, is the dentist in my opinion 😂 I noticed they have been putting a lot of sugar in the dog treats- which brings on a horrible thought of a veterinary dentist- probably crazy expensive. I grew up eating something similar except we used leftover potatoes and diced tomatoes cold and diced. Just a question or request could you demo oat milk for one. Also fruit compote or coulee for one. Also how can I store beans for the week. My tortillas go bad so does my bread. How do you store food in the fridge without spending money on containers. How could I use bread wrapper without everything getting soggy. I try to prep sandwiches or even lunch even though we eat at home daily. I have problems as things get lost in the fridge. My husband is like a raccoon reaches for things in the back and things get turned over or thrown out. At 70 he asks question never🏋🏿
Hi Carlotta 😁 Are you asking me to show you how to make oat milk or just try different types? I've never made oat milk before. I've made fruit compote on my channel several times- I believe the last time was in last years Thanksgiving video when I made cranberry sauce. It works the same with any fruit, just add sugar and a little water if necessary (depending on the fruit). I would love to make a coulis on my channel. 😁 Once beans are cooked they should be refrigerated and eaten within 3 days or frozen. I like to keep my bread in the refrigerator. I usually buy 2 loaves at a time and freeze one until ready to use. My tortillas never go bad because we eat a lot of them, but you could refrigerate those as well. I haven't tried freezing them. Maybe another viewer can comment on that. Thanks for the comment 😁
Your videos help with dieting since you show what you can do with a little bit of an ingredient. I have been trying to teach my husband not to take too much to “finish it up”.

I shop at Kroger. The prices are so much lower there for many grocery items, especially produce. If you are a “bargain shopper” who goes to many stores (as I’ve seen you do in other videos), you can really pare down the final cost. I agree it is easier to stay in one store for a specific menu though!
You make a good point 👍 We definitely could have gotten this budget down a bit. I shopped at Walmart because many of my viewers don't have access to the same great low cost stores as me. I just looked it up and I have a Ralphs near me that is owned by Kroger, but they are very expensive. Still....I could probably get some great deals on sale.....Sounds like another video idea 😂😂

I haven’t been buying avocados because they are so expensive but when you use just a little they are a luxury!!
They are a mainstay in my diet.

if you want a real challenge you could try to do an updated gluten free challenge but with converted Canadian prices.

I'm gluten and dairy free due to allergies, which have required emergency hospital treatment. Generally gluten free (gf) wraps are awful and fall apart before you can finish eating them. However, I love bfree, which you looked at, but my favourite is the sweet potato variety.
Hi Lee 😁 Interesting ....🤔 Thanks for sharing. I'll try the Bfree next time. I don't think I saw a sweet potato flavored one, but I'm definitely going to be on the look out for that one. Wondering if it is orange? I love the colored wraps, I think they are so pretty on the plate. I enjoyed doing a GF challenge and hope to do this again in the near future. Thanks for watching.
@@ArdentMichelle Yes, the wraps are a sweet potato orange colour. Here in rural Australia I've only seen the sweet potato, the green one and a bland coloured looking wrap. I have not seen the chia yet

Hi! First time seeing one of your videos - so far everything looks delicious! My boyfriend and I will have to try some of these ideas. One note - please be cautious when making allergen type videos that you double check your items to be actually gluten free! The chicken broth you used is NOT gluten free. It contains yeast extract which comes from barley. I know the item you chose is the budget friendly option, but the one that is gluten free safe is going to be about double the price.
(just got to the caldo de tomate bit - that is also not a gluten free product as also contains yeast extract)
I'll just quick add - its very difficult to find any gluten free bouillon... they used to make "granules" that were gluten free but I havent seen them in probably 10 years

I actually didn't even think about the chicken broth. 🤔 As for the bouillon, I figured that my GF viewers would have a standard GF option in their pantry staples, but you are correct. I should be more cautious because not all of my viewers may know this and some may be newly diagnosed. Great tips. Thanks for sharing!

Gluten free tortillas aren’t the best plain (unfortunately), but delicious crisp up or in an enchilada dish.
I use them in many dif things including quesadillas .Have for almost 3 yrs now .Found out I was a Celiac 4 days before my 52 birthday .
Yeah I couldn't tell any difference from regular shells when I fried it for the tostada. I still really want to try the green spinach GF wraps though. They must be good if they are sold out everywhere. 😂

I thought oats are naturally a gluten free food?
Based on how oats are grown and processed, wheat is often mixed in. Lots of GF people get sick eating oats. The gluten-free oats or purity protocol oats are safer for GF people.
As far as I know you must purchase gluten free oats.

Is that oatmeal gluten free?
In the video, I show the gluten free oatmeal in the store and say if you are gluten free, buy this. There wasn't any reason for me to buy it since I already had oatmeal in the house. However, I added the GF version into the price list.

Melissa, I LOVE those gloves. 😂 Sure, I could use the tongs more, but as it turns out, my hands are the best tool of all. LOL. It seems more acceptable to be handling the food with the gloves on and it helps my viewers that are germaphobic. I can relate. Glad you liked this video. 😁
