That’s a really great first loaf!👏🏼It’s wild how different they can turn out with just tiny changes. Using the parchment paper to transfer the loaf will make that last step way easier! Happy solstice to you guys! ❄️✨

I am 67 and way back in high school four of us girls would bring snacks to share together. One day a girl brought the best sough dough bread in the world and I had brought fresh crisp green bell peppers. It was the best snack I have ever had. We continued that tradition for years. Happy Solstice Kalle and family! As always I absolutely love your videos, living in Devon so different to here., thank you so much. Your sour dough episode makes me smile, I have been making it every week or so for the last 4 years and remember so well how complicated it seemed….as far as I can tell, as long as you have the starter and right ingredients and leave it to rise over night it just works, I don’t worry I about kneeling in a machine; just fold it a few times if and when I remember then in the morning cut it into desired shapes with scissors and bake…makes great rolls too, perfect for breakfast…great to add seeds or fruit or rosemary and garlic; no recipe; just have fun with it. Bizarre , but handling the dough with wet hands makes it much more manageable so I have given up working it with flour, much easier. Enjoy
I totally get what you said about the value of physical work outside for the body and mind, even if it is as (mentally) "simple" as snow shoveling. There's more and more scientific knowledge around the whole topic of how our brain's wiring requires us to be more outdoors, more in nature, more physically active and more uncomfortable in order to stay mentally stable and happy. It'd surely be an interesting topic to discuss on one of your next Cabin Talks. Literature I found very interesting around this includes: Nature Fix by Florence Williams, Grounded by Ruth Allen, Losing Eden by Lucy Jones, At Home in Nature by Rob Wood, and Adventure Revolution by Belinda Kirk. I've not experienced the short winter days you have in Sweden, but it comes across as peaceful and inspiring introspection. I supposed as long as one is living an intentional life, this can be the advantage. Your home is so beautiful with the white lights in the ice blue darkness.
Yes to me it's very peaceful and calming. But I can admit I was quite scared of the dark in the beginning, but now I've learned to live with it 😊 Thank you ❤

Hey Kalle, very nice video, as usual, and so cosy! Concerning the dough, in the wintertime, i use my electric oven which starts at 35°C to replace the warmth of the summer sun ...It helps growing better and way faster...(in a bowl covered with some wet cloth) 😉 So funny this fear and pressure of complete failure (at 27:45 🤣 ) when we, as grown-up persons, learn something new , trying our best, but nothing goes "right"... Some mistakes are yet great successes, as it seems to be with your bread... It looks very nice, and hopefully tastes nice too! Let us know... A suggestion for letting the sourdough rise at an “even” temperature- if your oven has a light inside it, you could put the bowl in there with the light on to provide a bit of warmth and consistency with the temperature. 😊

The fact that you like shoveling snow to keep your mind sharp and to keep your body in shape... that's so great! ... and as for the sourdough bread... it looked really good!🍽I am NO good at doing anything with homemade dough, but I have been following a Ukraine UA-cam channel for a while now that follows several different Ukrainian people/families, but my favorite is Maria! She does everything with such purpose and her cooking skills are very admirable! Even though they don't really say what ingredients she uses in her recipes it's easy to tell what most of it is and those videos have me wanting to make everything she cooks!!! LOL! Hmmm, seems like a complicated version. We literally just put our flour water and salt w the starter , mix, cover and let sit over night or all day in a warm place and then shape on a parchment paper, plop it in a heated dutch oven and bake.

I also like shoveling snow, even if I don't need to get out right this moment. Beside the physical exercise, it gives you *options*. Especially if something happens.
Would love to teach you how to bake sourhdough bread! Doing this myself for many years. It’s addicting. I kneed it all by hand, no machines. It doesn’t really matter if the room is not warm enough, it’s a matter of ‘feeling’ and ‘reading’ the dough. It might just take some more time. You better use a smaller basket for the dough because your fermented dough will fit into the dutch oven. Also cover your dough with a plastic bag when putting it overnight in the fridge. To put your dough into the pan you better first dropping it on to the baking paper and then together, holding the paper, put it into the pan. Much more handy. I don’t use a pan anymore, just an iron plate in the oven and a lot of steam.
So true with the midwinter! Living in Denmark and Ive never felt it more urgently than this year, the counting down of the days untill the sun starts to return. This is my first time living out in the countryside during winter and god.... it's so dark. At least in the cities, I was used to having the streetlights. None of that out here. Next year I'll for sure put up some more lights that can combat some of the darkness

It’s so funny seeing you try to bake the bread, because I have the exact same problem with baking pizza dough 😂 one day it was too dry, the next day it was too wet and sticky - although regarding to several recipes I did everything right and was not even able to bake it. My dough just said nope 😂 btw your bread looks way better than my pizza 😂
Kalle I just loved your baking with sourdough, my god I was laughing but in a good way because I am in this sourdoughworld- nerd space aswell and yes it takes time and alot of patience and MISTAKES to learn how to do it properly, a tip is to put the bread from the basket directly on a paper and cut on the paper then its very easy to put the bread on the paper in the dutchoven. It went fantastic to be the first time, good work ,be proud!!🎉🎉
Don't put the bread dough directly on the counter before you split it with the razor. Put that paper on the counter and then drop the dough on there, split it with your razor, then pick up the paper at the edges to drop it and the dough into the dutch oven. Merry Christmas to you all 🎄☃️❄️ I feel like your sour dough seems complicated lol I learned that too much mixing activates the gluten so slowly hand mixing ingredients together at first then let it rise then a simple four sided fold and rise again then one more four side fold and rise and into the oven. Not so stressful lol Use parchment paper and it is easy to place into the pan ☃️☃️☃️☃️☃️

I'd so love to own a suana. Not sure what it is, but even as a kid, I always enjoyed a good steam in the dark. It would be cool to have a suana with a chilled ceramic table in the middle of the room to lay on. To keep your hot side hot and your cool side cool and making Homer Simpson noises🤤
Since when do we celebrate midwinter? We did a couple of hundred years ago but today? I haven't ever heard about someone care about it. But it could be a northern thing in Sweden.
Where is your mechanical piano, set up in your house, my piano is in my non-heated car garage, with a roof but at the mercy of the cold is my mechanical piano by the car, if my piano were set up at your place, I could come visit, then we could sing Christmas carols and I would play you something beautiful on my piano, then I would be happy.

You can put the dough on paper, then put it in a mold (then the paper won't press) and then slice it.

Hmmm, seems like a complicated version. We literally just put our flour water and salt w the starter , mix, cover and let sit over night or all day in a warm place and then shape on a parchment paper, plop it in a heated dutch oven and bake.
Definitely put bread on Parchment THEN put in dutch oven. You did fantastic though!!

I also like shoveling snow, even if I don't need to get out right this moment. Beside the physical exercise, it gives you *options*. Especially if something happens.
Would love to teach you how to bake sourhdough bread! Doing this myself for many years. It’s addicting. I kneed it all by hand, no machines. It doesn’t really matter if the room is not warm enough, it’s a matter of ‘feeling’ and ‘reading’ the dough. It might just take some more time.
You better use a smaller basket for the dough because your fermented dough will fit into the dutch oven. Also cover your dough with a plastic bag when putting it overnight in the fridge.
To put your dough into the pan you better first dropping it on to the baking paper and then together, holding the paper, put it into the pan. Much more handy. I don’t use a pan anymore, just an iron plate in the oven and a lot of steam.

So true with the midwinter! Living in Denmark and Ive never felt it more urgently than this year, the counting down of the days untill the sun starts to return. This is my first time living out in the countryside during winter and god.... it's so dark. At least in the cities, I was used to having the streetlights. None of that out here. Next year I'll for sure put up some more lights that can combat some of the darkness

It’s so funny seeing you try to bake the bread, because I have the exact same problem with baking pizza dough 😂 one day it was too dry, the next day it was too wet and sticky - although regarding to several recipes I did everything right and was not even able to bake it. My dough just said nope 😂 btw your bread looks way better than my pizza 😂

If you turn the dough out onto your parchment paper, you can pick the paper up and put it into the Dutch oven.
Kalle I just loved your baking with sourdough, my god I was laughing but in a good way because I am in this sourdoughworld- nerd space aswell and yes it takes time and alot of patience and MISTAKES to learn how to do it properly, a tip is to put the bread from the basket directly on a paper and cut on the paper then its very easy to put the bread on the paper in the dutchoven. It went fantastic to be the first time, good work ,be proud!!🎉🎉

Don't put the bread dough directly on the counter before you split it with the razor. Put that paper on the counter and then drop the dough on there, split it with your razor, then pick up the paper at the edges to drop it and the dough into the dutch oven. Merry Christmas to you all 🎄☃️❄️ I feel like your sour dough seems complicated lol I learned that too much mixing activates the gluten so slowly hand mixing ingredients together at first then let it rise then a simple four sided fold and rise again then one more four side fold and rise and into the oven. Not so stressful lol Use parchment paper and it is easy to place into the pan ☃️☃️☃️☃️☃️
