I do this as my parents do it The eggplant is roasted on gas/tree twigs Then green chili too Make thecha of green chili, garlic, corridor leaves and salt( make it little hot with chili) Inside kadhayi put some oil, add cumin powder very little, then add roasted eggplant without skin and beaten in a particular vessel, then add thecha as well as lots of small cut green leaves of onion. Add salt according to the taste. With this bharta, make kalnyachi bhakri or bajri/jwari bhakri or bajri puris

Recipe is correct but in khandeshi baingan bharta style we put groundnut powder and not whole groundnut. Groundnut is widely cultivated in khandesh region and hence groundnut and its powder is widely used in all khandeshi recipes.
Yes it's depends on how you prepare. no one can beat khandeshi baingan bharta bcz we don't add tomatoes in it. Also try baingan bharta with adding Suki bombil in it. 😋
It’s look like northern Thailand namphrik if no fry in oil. I think within use oil without tadka much better much real taste. Kya hai bhaiya baigan ki toh maa ki aankh ho gayi na. My mother don’t use lot of oil and others ingredients but still taste better. Roti is roti paratha is paratha so this is not bharta. Eako raita bana diya yaar

Ye regular bharte se alag hai, isme Jo fresh seasonal sabzi (spring onions, garlic leaves, chillies) jati hai na uska taste sabse badhiya hota hai aur khatas ki zarurat hi nahi hoti hai... Peanuts bhi crunchy texture ke liye dalte hai, kabhi khaoge to pata chalega iska Kya swad hota hai.
