  • Steamed Fish & Veggies In The Instant Pot - Escaping The Mouse - ETM-675
    Ingredients:
    1 TBSP Extra-Virgin Olive Oil
    1 small onion, cut into 1/8 inch slices
    3 Garlic Cloves, minced
    16 Cherry tomatoes, halved
    1 cup chopped Zucchini or Summer Squash
    4 small White Fish Fillets (such as cod)
    1/4 cup Vegetable, Chicken or Fish Broth
    1 Lemon, cut into 1/4 inch rounds
    3 fresh Thyme Sprigs
    Small pinch Saffron (optional)
    Fresh Ground Black Pepper
    1. Preheat the Instant Pot by selecting Saute.
    2. Once hot, add the oil. Add the onion and cook for 2 minutes until it is beginning to turn translucent, Add the garlic and cook, stirring, for one minute more.
    3. Add tomatoes and zucchini and stir, cooking for one minute until some of the juice has been released. Add the fish on top , along with the broth, lemon, thyme and saffron (if used), and season with salt and pepper. Secure the lid.
    4. Select Manual or Pressure Cook and cook at low pressure for 5 minutes.
    5. Once cooking is complete, use the quick release. Serve the vegetables, topped with the fish and a slice of lemon.

    Ahh! DO NOT use the sharp side of the knife to scrape items off of your cutting board (or anywhere else). You will quickly dull the knife by ruining the hone. Flip your knife upside down and scrape things off with the top of your knife. Your knives will keep their sharpness much longer. The recipe looks great. I'm definitely trying this one!!

    This looks amazing!!
    When using saffron it's best to let a few sprigs soak in warm water for a few minutes then all all to the pot when ready.. it helps to bring out the flavor 👍

    I tried this and it turned out good. I didn't have saffron so I used Goya seasoning and I also omitted tomatoes. Thanks for sharing 😊

    I'm from and live in Houston. I never noticed your "Ya'll". I tell people I speak two languages: English and Texan. Not necessarily in that order. Great video! I want to do this this weekend.

      I'd recommend more lemon too, it was kind of bland. I goosed it up a bit with some habanero salt my mom told me about.

    Even 2 tblsp of butter and some oldbay with the lemon & Rosemary gives it a good flavor. I'll have to try this way and find some other dishes that saffron is used in.

    You definitely had enough lemon but you should have squeezed half of those lemon slices in the mix at the bottom and then put 4 slices on top and put the saffron in when you fried the onion. You should also salt and pepper those veggies at the bottom when cooking them and the thyme you can wrap in string, that way you can throw that into the veggie mix as well to cook with that to extract even more flavour, when done just lift out that thyme package when done cooking it all which is easy when you wrapped it. I would also put in a couple of small clicks of butter on top of the fish for extra flavour.
    Also 1 hour before you put the fish in you do a mixture of ½ dl of salt dissolved in 1 liter water, let the fish sit in that water for 1 hour then take it out and pepper both sides and put it in with the veggies you prepared. It will taste way less bland or you can dry salt which also works well. If you do the dry salt you can leave it for up to a day but but 60 minutes will do, just salt it like you would normally on all sides and then put it on a rack that give it some air underneath and into the fridge. You will be amazed how good it taste when the salt penetrate the meat more.
    Otherwise nice recipe, love fish it's amazing I grew up in a fisher family so we had fish all the time. Your fish filets looked like they were of good quality so that was nice to see and my dad would have approved of them.
    Thanks for sharing it was interesting to see this instant pot I been curious about them for a while.

    Hi I did almost the same but add more lemon 🍋 red sweet paper and apples 🍎 more garlic and onions, leno juice and bay leaves.

    how do you avoid getting food burn warning?
    I get it every time I switch from Saute to Pressure cook. It doesn't happen if I don't use Saute and just use pressure cook on its own.

      I've never gotten that message, but I usually cancel the saute mode before going to pressure cook mode, that may be the difference.

    How do you cook liver in boiled water or pressure cooker, without any additives or marinates so it is tender? Also, how do you cook chicken breast using these methods so it is soft as well? I tend to have rubbery pieces.
