Kris, first thing I want to say...that I really enjoyed this video. That pork butt looked awesome. And I like the fact that you cooked it in something that some might consider unconventional. Something designed to cook a pizza. I thought that was pretty neat. I’ve been following your channel for quite some time and have enjoyed most of your videos, however I’m gonna step out on a limb here and express that, imo, many times in the past you seemed to have come across as a little arrogant in the way you presented yourself. Especially in some of your videos where you ranted and raved about things that got under your skin. However, after reviewing this video, I see a side of you that is fairly entertaining and less arrogant. I like it that you left your flub ups in the video. It made you more appealing and down to earth. Another thing I really like about your videos and your content is that you are very good at showing the science of things ...will it work? Will it not work? If it does, why? If it doesn’t, why? And, is it practical? I really respect you for that. Hope I haven’t offended you in any way with my candid review. I think if I remove the bottom stones and add the steel rack right on top of metal screws that hold up the stones and place something to catch the juice underneath it will make allot of room. I really do think the ooni content is missing a lot of experimental content like this keep it up. By the way was it necessary to heat it at the end in the normal oven or do you think you can cook it all the way through in the ooni?
After I opened the foil it was done cooking. After venting rewrapping in foil and putting it in the oven is to let the meat rest. I don't know that you could maintain a low temp of 140-150 in the ooni. that's why I used the oven. You can also wrap the foiled butt in bath towels and set it in a cooler to do the same thing.

To get moisture and humidity in the oven, or else the meat would dry out too quickly. At least that's what I'm assuming
