If anyone is trying this in a smaller oven, use lump charcoal and wood to get it up to temp. Keep it warm using small pieces of lump charcoal so that there is no flame while cooking the loaves.
If you want to brown the tops a little more, add a tiny piece of wood at the end. To keep the stone warm between batches, add a piece of wood.
Don't load any loaves if the front of your stone is under 500.

I just made a couple baguettes yesterday, with yeast, I had sourdough going last year, but it went bad, but I want to start some again, now that I'm cooking every day. Those are two great looking baguettes, I really love the color and crispness. Thanks for showing this method.

Sorry to ask but is the 4 hour bulk starting with the final mix or is it on top of the 1:30 folding period?
The 4 hour bulk starts after the 1.5 hours stretch and fold period! So on top of! Hope this helps.

How would you inject steam into an ooni oven when baking bread?
I add large pieces of ice (this is in a bbq, but I assume it would work as well?)
you don't. You don't need steam it's not 100% essentail. Brick ovens have baked bread for centuries without steam. You can see his crumb is perfectly fine without steam

You say 100g of starter, the recipe on the Ooni website says 220g when you add it all up; what is it? Thanks!
The main recipe on our website makes more levain than is needed for the baguettes. So you make the main levain build and then you take 100g of that to make the baguettes. Hope this makes sense!
