It's not just corned beef, even SPAM is mega expensive. Correct me if I'm wrong but weren't these meats invented to be really cheap and easily obtainable during World war 2. Lets hope there isn't a world war 3 They will put the prices up even more and it will be the same price as the butchers meat.

Hi John That pie looks absolutely yummy. I made that in school in 1967 and made this like you did with the discs of pastry that were kept in a fridge. My mother told me that I would make better pastry than what she did but her cakes were much better than mine. In the States you can only really find canned corn beef as "corn beef hash" which includes potatoes and onions and is heavily spiced. Any red blooded yank will tell you hash and eggs just smells like breakfast. It's still pretty cheap over here and I think I'll use that as my filling for this delicious looking pastry!

Does English canned corned beef still have the key for opening the can? Here in the US, spam and other canned meats stopped using the key on the can like 20 years ago. But I recently saw an imported canned ham from Poland that had the key. Edited, I just saw you holding the can with key on top.
Some canned meats in the USA still have the key though, as you say, most keyed cans are imported. I wish some of the domestic cans still had the key, especially to prevent splashing of the more "juicy" meat cans.

Hello Mr John, I hope you're well! I made my version of your Scotch Pies this week, and they were a treat. I live in costal Vietnam, and can't yet get the pie tins, so I did mini pies in my 12x Yorkshire pudding tin. I followed your recipe, with a tiny sprinkle of chili flakes, for the Mrs! and I filled the next batch of tarts, cos I ran out of pastry for the lids, with a beef casserole, topped with cheese. Both were great with watercress salad and horseradish. Re the pastry, I do make my own tallow when I can, but can I use veg oil as a replacement for the lard? I used up all my tallow, and fell short by about 50g, so i added a little veg oil to make it up. The pastry was perfect, and tasted great, but i wonder if an all oil shortening will be ok, and if so how much do you suggest? Cheers, take care, Phil
You can do, but oil doesn’t create the flaky layers that solid fats like butter do, because it doesn’t have the ability to form layers within the dough. Pastries made with oil tend to be more tender than flaky, which can work well for certain crusts (like for tarts or galettes) but might not be ideal for classic flaky pie crusts. You show us the meals of my childhood (born in '44). Food prep machines? A manual rotary whisk, a manual mincer which screwed to the table top, had changeable discs for thickness of the minced beef, lamb, etc. And a grater, and a Lancashire peeler. . And some sharp knives. No processors, blenders, or mixers - all by hand. I can't even recall a balloon whisk. Suet for the Christmas pudding? Go to the butcher and buy it by the slab, weighed to your requirements, which we then pulled any membrane off and then grated it. I cooked similar food for my children in the 80s onwards. It's not just corned beef, even SPAM is mega expensive. Correct me if I'm wrong but weren't these meats invented to be really cheap and easily obtainable during World war 2. Lets hope there isn't a world war 3 They will put the prices up even more and it will be the same price as the butchers meat.

In the States you can only really find canned corn beef as "corn beef hash" which includes potatoes and onions and is heavily spiced. Any red blooded yank will tell you hash and eggs just smells like breakfast. It's still pretty cheap over here and I think I'll use that as my filling for this delicious looking pastry!

I've made that style of corned beef before. I do have canned corned beef as well, but pretty much have only ever used it for hash.

Does English canned corned beef still have the key for opening the can? Here in the US, spam and other canned meats stopped using the key on the can like 20 years ago. But I recently saw an imported canned ham from Poland that had the key. Edited, I just saw you holding the can with key on top.
Some canned meats in the USA still have the key though, as you say, most keyed cans are imported. I wish some of the domestic cans still had the key, especially to prevent splashing of the more "juicy" meat cans.

When I make this pie before I put the lid on I grate some strong cheddar over the mix, try it the cheese takes it to another level

I made my version of your Scotch Pies this week, and they were a treat. I live in costal Vietnam, and can't yet get the pie tins, so I did mini pies in my 12x Yorkshire pudding tin. I followed your recipe, with a tiny sprinkle of chili flakes, for the Mrs! and I filled the next batch of tarts, cos I ran out of pastry for the lids, with a beef casserole, topped with cheese. Both were great with watercress salad and horseradish.
Re the pastry, I do make my own tallow when I can, but can I use veg oil as a replacement for the lard? I used up all my tallow, and fell short by about 50g, so i added a little veg oil to make it up. The pastry was perfect, and tasted great, but i wonder if an all oil shortening will be ok, and if so how much do you suggest?

You can do, but oil doesn’t create the flaky layers that solid fats like butter do, because it doesn’t have the ability to form layers within the dough. Pastries made with oil tend to be more tender than flaky, which can work well for certain crusts (like for tarts or galettes) but might not be ideal for classic flaky pie crusts. You show us the meals of my childhood (born in '44). Food prep machines? A manual rotary whisk, a manual mincer which screwed to the table top, had changeable discs for thickness of the minced beef, lamb, etc. And a grater, and a Lancashire peeler. . And some sharp knives. No processors, blenders, or mixers - all by hand. I can't even recall a balloon whisk. Suet for the Christmas pudding? Go to the butcher and buy it by the slab, weighed to your requirements, which we then pulled any membrane off and then grated it. I cooked similar food for my children in the 80s onwards. As a consequence they cook traditional British meals as well as foods with pasta and rice ( there's nothing like a dish of oven roast root vegetables with your Sunday roast. And green veg steamed on the hob) , or all fresh steamed the following day with cold meat and mashed potato), love your channel - it's a warm hug, especially in these dreary winter days. E❤
