Again John, an outstanding work. I learn something new on every one of your videos. They are not only educational but entertaining. Not dry at all. Just a note, this past weekend I took your sourdough bread to a family reunion held at the out door shelter and fellowship area of the church that I grew up in at Friendship Baptist Church, Friendship, Virginia. There was none left to take back home. All my cousins ate it up or took a slice home with them. That is a high complement with those females since it is stiff competition with what is brought to church socials, homecomings, and family reunions.
Just cooked the Lorraine. Came out delicious. Wonderful pastry. And the filling was really nice. Far better than any shop bought. I've never cooked one before because all recipes I've seen required blind baking. I've got the salmon and brocolli to try that one next!

Ayup lad, I have made 3 of the quiche Lorraines, no flour at the shops, so I had to use shop bought pastry, just out of the oven, and the smell is devine!, One for the neighbor, and bro, in law, and you are right, the job satisfaction is very rewarding, letting them cool, and anticipating the plate turnover trick!, Happy days 🎉 pal, and keep safe.

We blind bake also after wards its cooled we brush with mustard and we blanch the broccoli for 1 min then ice water then drain well . Also smoked haddock works great nice with water cress salad . Really enjoy watching work great dishes too . Caramelised red onions and goats cheese is nice

I made the two quiches tonight and they both turned out lovely. First time I have made short crust pastry in years always just brought it. Won't be from now on it is so so easy thanks so much. Great tip about letting the bottom dry out on the pastry , well impressed.

May I tell you they are fantastic. I used the fresh salmon in accordance with your suggestion and it came perfect. My wife congratulated me for both quiches. Again John, an outstanding work. I learn something new on every one of your videos. They are not only educational but entertaining. Not dry at all. Just a note, this past weekend I took your sourdough bread to a family reunion held at the out door shelter and fellowship area of the church that I grew up in at Friendship Baptist Church, Friendship, Virginia. There was none left to take back home. All my cousins ate it up or took a slice home with them. That is a high complement with those females since it is stiff competition with what is brought to church socials, homecomings, and family reunions.

Just cooked the Lorraine. Came out delicious. Wonderful pastry. And the filling was really nice. Far better than any shop bought. I've never cooked one before because all recipes I've seen required blind baking.

We blind bake also after wards its cooled we brush with mustard and we blanch the broccoli for 1 min then ice water then drain well . Also smoked haddock works great nice with water cress salad . Really enjoy watching work great dishes too . Caramelised red onions and goats cheese is nice

May I tell you they are fantastic. I used the fresh salmon in accordance with your suggestion and it came perfect. My wife congratulated me for both quiches. I definitely recommend your videos to anyone with little or no experience of cooking to try these mouth-watering quiches as they are wonderful. Your salmon & broccoli quiche recipe is excellent. I cooked it in a Lakeland Perfobake loose based perforated quiche tin which helps the pastry cook right through.
