Mi Cuon Tom Chien/Crispy Noodle Shrimp

It's been a while since I've deep fried anything but this is an awesome dish that I couldn't stop eating with just 1 or 2. This recipe was given to me by my cousin inlaw, at her house party. Boy! I was hooked on this shrimp dish. The cool thing too is it's super easy to make for home parties. Check out how it's done now!
Ingredients
1 lb of jumbo shrimp, shelled and devein with tail on
5 spindles of fresh egg noodles
3 garlic cloves, minced finely
Salt and pepper
Cooking oil
Dipping sauce:
1 cup of Thai spring roll sauce
1 large lime, fresh squeeze
1 tbs of premium fish sauce
1 tsp of sugar, or to taste
Serve with lettuce, mints, and Vietnamse carrot and daikon pickles
