How To Make Curry Chataigne | Foodie Nation x Dev

  • In this week’s episode, Kez learns how to prepare Curry Chataigne:
    INGREDIENTS
    3-4 tbsp coconut oil
    1 medium onion chopped
    ½ tsp methi or fenugreek seeds
    3 pimento peppers, chopped
    1 medium scotch bonnet pepper, chopped
    2 tbsp minced garlic
    2.5 tbsp green seasoning
    2 tbsp curry powder
    ½ tsp anchar masala
    ½ tsp roasted geera powder
    1/2 cup water to cook curry
    4-5 small chataigne
    2 cups coconut milk
    1/2 tsp salt
    Water
    METHOD
    Heat the oil and when it starts to smoke, add in the methi. Let this fry for about 3 minutes, until the seeds gets dark brown.
    Add in onion, pimento and scotch bonnet. Saute for 1-2 minutes.
    Add in garlic, saute for 45 seconds.
    Add in curry powder, anchar masala and geera. Fry this for 45 seconds.
    Add in the green seasoning, mix well for 30 seconds.
    Add in ½ cup of water, mix and let it bubble.
    Fry the mixture until the oil separates and floats to the top.
    Add in all the chataigne, mix and thoroughly incorporate all the curry in the chataigne. Cook for about 5-7 minutes.
    Add in salt, and then the coconut milk, mix again.
    Add in enough water so that the chataigne is almost covered.
    Lower heat and simmer for 1 hour, keep on tasting for salt and the right soft texture. Serve hot!

    I'm from Dominica and we call it Breadnut. I never even knew that the petals were edible. 😲 We usually let the fruit fall off the tree and when it turns brown and starts to rot, we collect it, discard the rotted petals/flesh and skin, and remove the seeds. We then wash and boil the seeds in salt water. When it's boiled, we de-shell the seeds and eat the nut inside the seed aka the breadnut.

    OMG.... You all nailed it.. I am hungry.. Anyway pro tip... My God father is old school he heard me saying some time ago that I don't like chatagne seeds in curry chatagne. He said to prepare the chatagne just how you all did and boil the seeds separately. Blend the boiled seeds and add it to the curry chatagne instead of the coconut milk and taste the difference. He said that if you want you can add coconut milk also for a more creamy texture.

    I live in Florida...years ago I dated a Trini and I always looked forward to Diwali because his friend's wife cooked curry chataigne and I fell in love! Now you've shown me the how, but I cannot find breadnut ANYWHERE!!!!!!

    In Martinique where I'm from we only eat the seeds however we gotta wait till the pods are extremely ripped and soft to the touch damn near rotten inside at this point the flesh will be way less sticky but hella gooey and it smells phony as well but it's manageable I'm just wanted you to know that so you guys have a heads up just in case you wanna try some you might wanna peel that bad boy outside the house or your wife gonna be mad bad at you bro😂
    Once the seeds are harvested we usually either discard the flesh and peel in the compost bin or feed it to our livestock but most people from Martinique will throw it away all together
    That's why I'm pleasantly surprised by this Trinidadian recipe
    🤔You guys poked my curiosity on this one I'll definitely give it a shot soon

    Great recipe, 100% spot on, better than the other Sada roti 🤡 who don't know how to cook.
    Tip: My mother prepare the night before and soak in water so it doesn't discolour.

    That's a beautiful fresh and the finish looks absolutely delicious. In Guyana it's called Katahar Ka-ta-har, and especially for prayers and weddings, tons of it is prepared by many women sitting together, patiently cleaning and preparing dozens of them.     What Dev??? Only half of the seeds to use??? No no I want ALL the seeds. I also spread a large piece of brown paper to clean the chataigne...too much mess to clean up afterwards
