so good that you have captured the essence of Isaan/Lao food. When we visit my wife's family in the village we often drop into farmyards to say hello to neighbours in the morning. We are often shown to the sticky rice and palate (selection) of Nam Priks. I start with caution - fearing the spicy one, but will be met with glorious flavours that have been finely tuned over many years, even generations. I can smell the wood smoke from the farm yard 'kitchen' now. Thank you Joel.

I can never watch Mark's or your video at night, would always go to sleep hungry. I love Isaan food! I miss it so much, especially the Grilled fish and Laap Pla with sticky rice, love the way the make it in Si Chiang Mai, Nongkai. Agree with you, the Jaew/Chillies/Dip make the dish, each area and household have their own version...just that most times its super spicy. Just waiting for the Pandemic to be more manageable and safer to travel, then I'll be on a plane to Thailand to visit my parents in Udon Thani and drive around to eat the food in that region. I'm living vicariously through you during your trip and meals.

Yes Chiang Mai is my first destination probably. I’ll try to plan my trip with tips from all you vloggers haha. I just dont know how I’ll manage with 20 words Thai vocabulary XD. I had it easy last trip cause my Laotian friend was basically my guide.

Hiiiii Vonn!!! I do indeed remember you commenting previously on the plastic bags :-) that is kind of a trick for the market sellers here, but I’ve seen it in a few other countries also. The higher temperature inside helps the bag stay puffy, but it’s also the way that they tie with the rubber band and swing it around like that, hilariously, my friend Mark actually made an entire video just about these little tricks

I'm Thai myself and have friends that are from Laos. The one thing I do notice is that their tolerance for spicy food is even more than a typical Thai guy! I usually cook with 8-12 fresh red Thai chili's seed and all in a dish but my Laos friends will devour half to whole red chili's while just eating their food! "My head get's itchy just thinking about it!"...

Every country, particularly rural areas, of east asia have unique methods of preserving foods from simple to complex. And as you pointed out Joel, maximises health & nutritional benefits of the foodstuff. In more northerly climes along coasts is a process of air curing - not simply drying. Brings out amazing flavours, and when you get as far north as Alaska the air cured fat from seal can have a flavour reminiscent of blue cheese.
Joel and Li this was a good stop, Auntie Rabbit is so kind to welcome her into her home to eat at her table, the environment looks so cool and comfortable and the diversity of the food she layed on was awesone. Safe travels guys.❤

Oh wow, 2 comments today :). Thank youuuu as always Florencia! Ok, so Ill just comment about the cost - yes I was actually jaw-dropped hearing 150 baht for this. I thought she said 190 (9 and 5 have the same tone), but then I thought oh ok 150 for the fish... yeah I guess thats fair. But nope! 5 things for 150... unreal. And this made me love her all the more, because in my opinion she not only COULD have charged us more than this, actually she SHOULD have! And I would have happily paid! It made me love her because in doing this I knew beyond a shadow of a doubt that she charged us exactly the going price, even though I didnt even ask the price at the beginning, and even though I ate all the food at HER own table. Oh wow, these kind of things blow me away... I happily paid her double the price as a tip, and I still think that I paid less than what the experience was worth this morning. Amazing :). One of the reasons why I always recommend this part of Thailand to travelers who ask me "Ok Joel, if Im wanting to see ALL of Thailand, and not just the tourist pretty places, where should I go?"

This is one of my dreams. I would love to live in a small home in Jamaica and have a restaurant on the main floor and make all my home cooking. I live in Canada and achieved the north american dream, house, cars, vacations, THINGS do not bring happiness. I am hopeful the world returns to some peace soon so we all may travel and experience life again.

@@JoelsTastyRide It was a hard lesson to learn. I used to tell myself a lot you have nothing to be unhappy about, you have achieved everything that should make you happy. I am happiest when I am able to cook for people and see them enjoy my food or when I get to speak with someone about their culture and learn new things. So we are now becoming more simple in life, quality over quantity. I think one positive thing about the pandemic is that people were able to realize the luxuries they can live without comfortably. I wish everyone peace, happiness, and restful nights sleep.

Thank you for your taught my beautiful friends. 3 days after they ask me to leave the hospital in August they readmit me in intensive care and i stayed there for 7 weeks. A blood poisoning cause multiple reactions of my body and i was rejecting the treatment. I am slow but feel millions time better than September. Love you, i will be back, it is a promise ✌🏼❤️

I am very interested in the foods and how they eat vegetables at their meals as I am overweight and trying to lose weight. I feel like watching your videos with all the vegetables will help me to change my diet for the better. So moved and so inspired.
so good that you have captured the essence of Isaan/Lao food. When we visit my wife's family in the village we often drop into farmyards to say hello to neighbours in the morning. We are often shown to the sticky rice and palate (selection) of Nam Priks. I start with caution - fearing the spicy one, but will be met with glorious flavours that have been finely tuned over many years, even generations. I can smell the wood smoke from the farm yard 'kitchen' now. Thank you Joel.

I can never watch Mark's or your video at night, would always go to sleep hungry. I love Isaan food! I miss it so much, especially the Grilled fish and Laap Pla with sticky rice, love the way the make it in Si Chiang Mai, Nongkai. Agree with you, the Jaew/Chillies/Dip make the dish, each area and household have their own version...just that most times its super spicy. Just waiting for the Pandemic to be more manageable and safer to travel, then I'll be on a plane to Thailand to visit my parents in Udon Thani and drive around to eat the food in that region. I'm living vicariously through you during your trip and meals.

The next video actually is focusing just on one of the special dips you were mentioning, I have never actually seen it before as a single dish, just made it with friends at home ha ha. Yes Chiang Mai is my first destination probably. I’ll try to plan my trip with tips from all you vloggers haha. I just dont know how I’ll manage with 20 words Thai vocabulary XD. I had it easy last trip cause my Laotian friend was basically my guide.

Hiiiii Vonn!!! I do indeed remember you commenting previously on the plastic bags :-) that is kind of a trick for the market sellers here, but I’ve seen it in a few other countries also. The higher temperature inside helps the bag stay puffy, but it’s also the way that they tie with the rubber band and swing it around like that, hilariously, my friend Mark actually made an entire video just about these little tricks

I'm Thai myself and have friends that are from Laos. The one thing I do notice is that their tolerance for spicy food is even more than a typical Thai guy! I usually cook with 8-12 fresh red Thai chili's seed and all in a dish but my Laos friends will devour half to whole red chili's while just eating their food! "My head get's itchy just thinking about it!"...

Every country, particularly rural areas, of east asia have unique methods of preserving foods from simple to complex. And as you pointed out Joel, maximises health & nutritional benefits of the foodstuff. In more northerly climes along coasts is a process of air curing - not simply drying. Brings out amazing flavours, and when you get as far north as Alaska the air cured fat from seal can have a flavour reminiscent of blue cheese.
Joel and Li this was a good stop, Auntie Rabbit is so kind to welcome her into her home to eat at her table, the environment looks so cool and comfortable and the diversity of the food she layed on was awesone. Safe travels guys.❤

Oh wow, 2 comments today :). Thank youuuu as always Florencia! Ok, so Ill just comment about the cost - yes I was actually jaw-dropped hearing 150 baht for this. I thought she said 190 (9 and 5 have the same tone), but then I thought oh ok 150 for the fish... yeah I guess thats fair. But nope! 5 things for 150... unreal.
And this made me love her all the more, because in my opinion she not only COULD have charged us more than this, actually she SHOULD have! And I would have happily paid! It made me love her because in doing this I knew beyond a shadow of a doubt that she charged us exactly the going price, even though I didnt even ask the price at the beginning, and even though I ate all the food at HER own table. Oh wow, these kind of things blow me away... I happily paid her double the price as a tip, and I still think that I paid less than what the experience was worth this morning. Amazing :). One of the reasons why I always recommend this part of Thailand to travelers who ask me "Ok Joel, if Im wanting to see ALL of Thailand, and not just the tourist pretty places, where should I go?"

This is one of my dreams. I would love to live in a small home in Jamaica and have a restaurant on the main floor and make all my home cooking. I live in Canada and achieved the north american dream, house, cars, vacations, THINGS do not bring happiness. I am hopeful the world returns to some peace soon so we all may travel and experience life again.

@@JoelsTastyRide It was a hard lesson to learn. I used to tell myself a lot you have nothing to be unhappy about, you have achieved everything that should make you happy. I am happiest when I am able to cook for people and see them enjoy my food or when I get to speak with someone about their culture and learn new things. So we are now becoming more simple in life, quality over quantity. I think one positive thing about the pandemic is that people were able to realize the luxuries they can live without comfortably. I wish everyone peace, happiness, and restful nights sleep.
You & Mark really inspired me to start making my own Jaew or Nam Prik at home for my veggies 😄

Watching Thailand videos, and Joel and Li in particular help me get away from tough life here in Tonga, we had a volcano and Tsunami last year and just had an earthquake followed by another Tsunami warning. Moving to Thailand God willing
