Fun fact it is illegal for companies for deny a warranty (in the US) if you open a device, even if it had a void if opened sticker. They can and will pull that shit on you if they think you did. IF you fight them hard enough and with legal action the would not win.

I currently have 2 AC routers running as wired APs to cover my house. Should I wait for Wifi 7 routers to become affordable or buy 2 of these?

Do you have issues with the two AC routers? If not, wait, but it will take a a few years before cheap and good becomes a thing with WiFi 7.

Even wifi 6e is still expensive, and mostly incompatible with openwrt if u want to use that. Unless u can spend a butt load money then just get it.
