Agreed !!! I wish I could get fressh Conch where we live. Closest we can make is substituting the conch for shrimp. Not the same - but it's still yummy!
that's it in a nutshell right there, keep it traditional. I know there are people in the Bahamas that are starting to add cucumber and mango, not the style I like at all. my wife and I also do the same with shrimp, although we cooked the shrimp all dente first. fortunately we get fresh conch that comes in on private flights from the Bahamas, it's always a treat... most times the conch's not even out of the shell for 4 hours by the time the plane lands. very fortunate, however we have tried conk from specialty markets that is previously frozen and it's definitely not the same. you can make crack conch with the frozen stuff if you can find it, just give it to sniff test when you buy it at market if it's thawed out... there should be no sour odor to it if they're handling it properly.

Awesome!! It was so nice there! We came back and couldn't find conch, so we used shrimp. I'd imagine frozen conch from the supermarket would be good, not as great as fresh from the ocean in Bahamas though!! :D ;)
We’ve done the same recipe with shrimp. It’s obviously not the same, but, still tasty. It’s conch, onion, green pepper, orange juice, lime juice, and a little spicy pepper. Salt and pepper to taste.
