That's what I always wonder, too, but I think she cooks on a balanced way (ues real fat like butter and cream and oil, but in moderation and in helathh ways like using good olive oil in dishes and not frying IN vegetable oil, etc. I've recently started making some of her meals (and others like her and have been sticking to sensible portion sizes and ONLY three meals- no snacking unless its an apple or some veggie sticks in the evening, and I am actually starting to lose weight and am not hungry bc I'm eating yummy food! I'm 48 and pre-menopausal and I have tried EVERYTHING and its so hard to lose weight at this age. (for ref, I'm 5’6” and weigh 163 lbs, size 12 with a belly. I'm not “huge,” but BMI is too high and I feel yuck. So far, her foods make me FEEL good.
I don’t know how you stay so slim and eat all of this delicious fiord. I’m over here eating protein and seeds and nuts, working out four times a week, just to maintain my ideal weight. Ugh! 😊
This dish took me back to my teenage years. My friend’s mom used to make this and I thought I’d gone to heaven. I know it uses a lot of salt and canned goods, but it’s delicious nonetheless.
I make everything gluten free as I have celiac’s disease. It’s possible. I use beef bone broth, kosher salt and organic mushrooms. I can’t use the campbells because of some of the flavoring but it turns out beautifully.
It is also possible to make onion soup in a gluten free way and use it as flavoring. ❤It takes a little research and experimentation but it’s worth it.
I guess--if you work out all day and sweat out the electrolytes (like our host), then you can handle all that sodium (and preservatives from the canned foods). Otherwise...Bring on the Blood Thinners, Woot Woot!!!!

Looks good! I would drain the mushrooms and leave off the foil during baking. Add any meat and it would be a whole delicious meal.
