How to Cook Rice Perfectly Every Time | Stovetop Method | Easy Asian Cooking

- Cooking rice is not a difficult process at all, but unfortunately there is a lot of bad information out there. Forget rinsing the rice in a sieve, or "fluffing the grains with a fork", or seasoning it with salt (lol). Asian people don't do any of this when cooking rice.
This method works for lots of varieties of rice - Jasmine, Japanese short-grain, etc. - and you don't even need to measure anything.

@@mintysingularity I really don't know how many kinds of rice they have in India, I know they predominantly use Basmati. And Basmati is the kind of rice you fluff. I live in the Phils and we have a wide variety of rice that varies on preparation. Amount of water, times you wash it, etc.

When my Asian girlfriend showed me the thing with your finger to measure the water I did not believe it. I couldn't understand how it could be the samesince everybody's fingers are different and the amount of rice and size of pot are different. After I made it myself a couple times and seeing her do it dozens of times I realized it works every time. coming from a home where we only ate rice once or twice a month I really should have trusted her since she'd been eating rice three times a day for over 20 years

Or add a dash or cinnamon,nutmeg amd sugar and you have horchata

I have used the rice cooker all my life until college where we weren't allowed to bring rice cookers. That detail about covering with the lid after the boiling water level matches the rice level is KEY because I ended up with rice liquid all over the stove and wet rice. Thanks, Adam!

Him telling you how to cook rice is almost like hearing a really motivational speech.
This is pretty much exactly how my mom taught me to make rice and I was so happy when you washed because I feel like a lot of people skip over that step! The only thing I was taught different is my mom always told me to turn the heat off even if there is some water left since the pot is still hot and the rice will finish cooking.

I only recently discovered Adam Liaw (I'm not Australian!). He is by far one of the best teachers on the net for cooking methods. He adds in all the small details that others leave out but makes a huge difference in the end result. What all his videos to become a better cook! I hope he bounces back after the covid-19 pandemic's economic fallout (I read that many of his business opportunities for the next 6 months have been canceled).
And not one of the best but The best MasterChef winner of Australia.
The result looks great, I have got to try it with the lid off and then on, just like you did.
After watching "Jiro dreams of sushi" I have started to cook my rice in a pot with the lid on, and a big bucket of water placed on top for pressure. 2 minutes on high heat or until I see steam, and 15 minutes on the lowest setting.
After watching a video from the Sushi Assiciation of Japan I have started to palm the rice in a small amount of water (to polish it), before washing it with abundant water.
The Japan Sushi Association video also showed an astonishing step of not only soaking rice for 30 minutes, but also letting it dry in a sieve for 30 minutes.
Combined with a good rice vinegar:sugar:salt "sauce" right after cooking and with the rice paddle "cutting" technique + fanning the rice to cool - I have arrived at the best rice ever, since first cooking sushi rice over 10 years ago.

Thanks, I have already researched dozens of videos and yours beat them all out. The part about the rice choosing how much water to absorb did it for me. I want an oriental rice, not too sticky but not too granulated and yours absolutely makes perfect sense. I look forward to more of your videos now.

Here in the Philippines, we use the rice washing liquid as stock in some stews and soups to add more body and flavor to a stew or soup dish
This method is legit. I watched me do it just a few hours ago and it was my first time. I used Jasmine brown rice so I had to cook for 30min instead of 15. My rice turned out great. Just as good as my mom and dad's and they've been doing it way longer than me. Next time I wanna try it with the Japanese seaweed, sesame seed and salt seasoning.
I never had bad home-cooked rice until my wife passed away and I was forced to make it myself. I followed your instructions and was very pleased with the outcome. May I be as bold to say that I think you took my wife's technique and published it for yourself. LOL! Thank you for your instructions it worked out wonderful. Now I don't have to go to my local Chinese restaurant to buy cooked rice.

I'm gonna be the first one to admit that I couldn't make rice properly before. It was either mushy or half-cooked, I once burnt it to the point where I almost had to throw the pot in the garbage.
I literally told myself: I'll follow this guy's intructions and if it doesn't work out, I'll just buy a rice cooker.

I cannot appreciate this video enough. I got a bag of fresh jasmine rice and I’ve been epically failing it. Batch after batch of barely edible rice. It’s either slightly undercooked and sticky, or very well done and falling apart. Or the top is cooked bottom undercooked, or bottom mushy top dry. Not me almost crying but totally me almost crying after, what? 20 failed tries.
I saw this video. Put my hands together in prayer and followed your instructions. When done… I was thrilled to see it not only perfectly cooked but FRAGRANT as well. Oh the fragrance was enough to tell me this was a SUCCESS!! THANK YOU!!!!!
One additional thing you can do is add a small piece of rinsed Kombu seaweed (Rinsed just enough to remove the surface salt) to the top of the water which will add a touch of umami flavoring to the rice while it cooks. Superb for sushi rice, and rice-based Japanese recipes.
Adam, I am thoroughly enjoying your channel. Everything I have always wanted to know about Japanese cooking, but was afraid to ask, is here. Now, I just need to find a consistent, economical, reliable source of ingredients... No easy task in Arkansas, USA.

I have to say that, to me, rice has been a labor. Much more so than pasta and potatoes etc. I've tried this a few times, and it's an excellent way of doing it, in that takes a lot of said labor out of the process of making excellent rice.

I just put 2 cups of boiling water to 1 cup of rice. Cover it and put it to minimal heat for 20 minutes. And thats it. Perfect cooked rice.

Pyrex bowl. 2 cups water. 1 cup white rice. 20 minutes at 60% on 1000w microwave. Let sit for 5 minutes.

I like your method. I'm actually craving making rice but instead of water, cooking it in some broth. Don't have anything to do that though.
This is actually very helpful for me. I always do the traditional British method.
Step 1. Don't wash the rice. Just put it in a pan with a little bit of salt
Step 2. Boil the kettle and pour the water over it. Doesn't matter how much
Step 3. Boil on a medium-high heat for ~10 minutes
Step 4. Take off the heat and drain into sieve
Step 5. Let it rest for a minute in the sieve before fluffing a little
Step 6. Serve
Your way seems better lol. I should try yours.

We got given a Cockatoo brand rice cooker from Korea as a wedding gift. That was the most useful gift ever. I think it lasted about 8 years before the electronics stopped worlimg properly. Apparently if you're in Korea they have a lifetime warranty or it's a very long warranty at least. The rice is perfect everytime 👍👍👍

@@mricarda you don't need a rice cooker. You just need a pot. I've been making rice on the stovetop my whole life, never an issue. No need to spend money on a big bulky gadget, a pot works just fine.

I find it fascinating the difference about how rice is making in each culture. Here, in Brazil, rice and beans are our basis in any meal, but for us, it goes with garlic and sometimes even onions, and that's a basic white rice, but we can also do it with small beans, meat or vegetables.
