The best way to make a rolled omelette is to shape it right after pouring it in, then rolling it all the way so that the seam is under the roll, then pour in the next layer, lift up the roll and let some of the egg go under it so it can fuse to the bottom, shape the cooking egg batter and then roll it up again, repeat. Once all the egg is in, with the seam on the bottom, you can use the spatula to shape it into more of a rectangle/square shape (you can do this in the pan or on a plate).
