    Hey Y'all! Ramadan Kareem! Welcome back to yet another Recipe video! This recipe is a special one! It's a UNIQUE, one-of-a-kind Vimto No Bake Cheesecake! A perfect treat for your Ramadan in our Ramadan Edition recipes! The beauty of this recipe is that it incorporates one of the most popular drinks during the month of Ramadan into this recipe with berries and a layer of Glossy Vimto flavoured Jelly on top and to make it even better, it's super light and you don't get a strong taste of sugar!

    Vimto Cheesecake
    Ingredients:
    - 200g Digestives
    - 70g unsalted butter
    - 900g Cream cheese
    -66g Sugar
    - 60ml Vimto
    - 15ml Lemon juice
    - 80 g Sour cream
    - 120 ml whipping cream
    -25g Icing sugar
    -125ml warm Water
    -3.5 tsp Gelatin Powder (Strawberry or unflavoured)
    -240ml Vimto
    -120ml room temp. Water
    - berries for topping (optional)
    Directions:
    1)In food processor blitz digestive biscuits into big crumbs. Then add melted butter into food processor and blitz together till combined.
    2)Pour the crumbs into springform pan and press down and into the sides. Chill in the fridge.
    3)In a big bowl add Cream cheese and whisk till fluffy. Then add in sugar, vimto, lemon juice and sour cream and whisk between each. At the end whisk an extra minute till it becomes well combined and fluffy. Set bowl aside.
    4)In a chilled bowl add whipping cream and icing sugar and whisk on high till stiff peaks form.
    5)Add in the whipped cream to the cream cheese batter and fold carefully till combined.
    6)Pour the batter into the chilled springform tray and fridge overnight.
    7)In a container mix gelatin powder with 125ml of warm water and mix till all dissolved. Then add 240ml of Vimto and 120 ml of room temperature water and mix till full dissolved. Pour the jelly mix on top of the set cheesecake and place in fridge till set. (2-3 hours)
    8)Take the cheesecake out of the fridge and garnish with berries. (Optional)
