What you can do is do DEGREE HACKING to get your initial Bachelor's Degree. Then you go for what's called a Post Bacc PreMed Program. They are either a certificate or even a Master's Degree. Columbia College has one that is two years long. I've recommend this plan to people that I've talked into joining the military. Join the Military, get a Bacc Degree when you are in (doing things like Ryan has said) then get out and do out a Post Bacc. They Military also supported this by starting their own Post Bacc program to get into their Med School. The GI Bill is worth $250,000.
I think what you are missing is that , almost all if not all medical schools require science prerequisites with some including labs, but the actual major is quite irrelevant.
U Mass Global has a self paced Associate's program. This is one situation where hacking an Associate's is worth your time. Hack the Associate's, then transfer over.
Do you have a solution for P/F systems = 3.0 GPA on transcripts for competency based schools? MD/DO schools require a high GPA (at least a 3.5 GPA) for consideration. Would you know anyone who went this route and got accepted? I want to go this route, but a post-bacc is too much.
University of Wisconsin has a "Flex" program in Health Science that might work great for your Pre-Med stuff. flex.wisconsin.edu/degrees-programs/health-sciences/ They do require an Associate's Degree to get accepted but they also have a Flexible Associate's program flex.wisconsin.edu/degrees-programs/associate-degree-online/... You'll definitely need to reach out to whatever Med Schools you're trying to get into and see if those degrees will open the door. Hope this helps!

As a result, if you finish premed in 1 year, going into med school right after would mean that in the senior year of high school you complete med school applications and take the MCAT? I don't believe that's possible. Even if you could, how do you get the extracurriculars and letters of recommendation you need to apply?
Depends on the Med school, but even if you had to wait in Limbo between your undergrad and med school to be accepted... It's still so much faster than working on your undergrad for 4 years. I will say, this is a fantastic point. More people need to look ahead at the red tape and see what's required for their specific path.

I've seen medical schools accept all sorts of random majors if you ace the MCAT. Having said that, I'd study for the MCAT separately, and I'd also reach out to medical schools you're wanting to attend and make sure you're desired major is going to open the door before you make a decision. Also, WGU just launched a Health Science program. I imagine a lot of people are going to use that program to accelerate pre-med... as long as their desired med schools will accept it.

You're correct, there are no particular undergraduates degree required for medical school.
