- Join Chef Bourque as he cooks his okra down for a shrimp gumbo. His slimeless okra does it's thing once it hits the gumbo pot. The talk in shrimp town is, "you gotta get into that pot if you wanna be recognized as one of the best tasting shellies on the bayou." Aieee!

merci,merci, merci! Thank you so much for posting this....this is just like my mom did her okra for gumbo, and she would always put a bunch up in little packs in the freezer to have ready!! Unfortunately, she passed away in February of this year. and I will miss her so very much. She did show me how she did it ...but that was many years ago....this was like a note from her from Heaven, reminding me....thank you Chef Bourque!!!

doublejbbq I make it like this and serve it as a side dish for people who are not familiar with okra. It can be added to individual bowls if desired. Aieee!
Chef, oh yeah that looked so good! But, I can't stop thinking of putting a pound of shrimp in there with some cayenne pepper and a touch of garlic salt, like you suggested at the end there! This recipe is low carb! It's perfect for me! I've got to find some okra now! Thanks for sharing a great one my friend!

as a Trahan from southwest Louisiana, family from cameron and creole, I love this video about removing the slime, very helpful. (no tomatoes in a gumbo!!!!!! we are passionate about that, sorry)
My grandma was a Trahan from Pecan Island. Thanks my friend for the comment. I don't always put tomatoes in my gumbo, but at times I do and it's a personal thing just as it is with your family. Cheers!
Hey, my Mama was a Trahan from Houma in Terrebonne Parish. I have had it with both with and without tomato, both good, but I prefer to leave them out.A little vinegar adds the acidity that the tomatoes do, this helps remove some of the slime also. I have the same magnalite pot and about 15 other styles, great pots, but I always use wooden utensils in them, that constant clanging drives me nuts. If I’m trying to get the graton off the bottom, I just add a little water in the end. Anyway, good video, thanks for posting and laissez bon temps rouler!

Good video on no slime Okra Chef Bourque, I ve not tried to de slime okra but I may give that a try because that's why I don't put okra in my Gumbo. Hey question Chef Bourque do you think I could de slime the okra in the oven?
DarylCincy DW's Southern Cooking You sure can DW. The only reason I don't do it is because it takes a long time to process, about 2-4 hours. I really like to do it the way I do mine so I can always add shrimp to mine as a side dish if I wanted to. Aieee! Good to hear from you my friend. Take care.
was wondering if you could slice the fresh okra in half and scoop out the center's of the okra. would that make a difference or does the slime come from the shell itself. Thanks!
I never research the okra pod my friend, but if you cook it down enough the slime will disappear. LOL!

I put rotel in mine, put it in a crock pot about 10PM on low and when i wake up at 5 it's done.

My grandparents growed a ton of okra up in the woods. My grandma cooked on wood stove. She had a trick. When cooking her peas or any boilery she would put okra pods on there and they would get cooked in there with whatever else she was boiling, she would carefully remove the okra pods from the pot and put them into a bowl as a side dish. So fabo.
2 Tablespoons white vinegar cut the slime
