1-2 lbs okra
1 medium onion
5 cloves garlic
3 birds eye pepper
1/4 teaspoon black pepper
3-4 tablespoon olive oil
salt (adjust)
13/4 cup prepared salted cod

Uncle Chrisss…This looks brilliant! I don’t mind the slime but knowing I can make it this way for non slime lovers (like my hubby and kids) gives me some peace of mind as I do love my okra😍

U can also leave it in side for a couple hours or overnight dries just as well

good idea. I never did it like that before, I didn't even know ochro will not slime when cooking, lol, even cooking has it's own technique
What is prepared salted cod I haven't heard this before and don't have in indian country and also don't have bird eye chilli but I love okra honestly speaking
My Momma is from Alabama...her folks 100s of years Alabama people she used to make Okra similar to this but she would not dry it...put corn meal and spices on it let it sit for a while cook it/fry it with chopped onion...last add cut up tomatoes in cast iron skillet, one of my favorites. The result looks similar to this.😁

I put my okra in the oven to get out the slime. I use Mrs dash seasoning with olive oil and leave it to bake for 5 mins. But I think will try your recipe.

Yes, he just lost a lot of the precious vitamins and minerals by drying that okra. The slime is one of the characters that makes okra a super food.
What I do to dry my okra Is after I rinse it I spread it out in one layer while it is whole and let it dry or if you are in a rush get some paper towels and dry each piece individually.

I let it soak in white Vinegar and water, that helps with the slim as well.

Thank you because I hated okra even as a kid. The skime bothers me. Im not a picky eater but I just cant eat okra with slime in it. ❤
You don't have to air dry or sun dry them...you just put some salt and fry them them for a few minutes on medium heat...all the slime will go away.
You put them aside and then start cooking the cod, onion etc and then add the okra...voila! No slime.
This is the way indians make fried okra..it's called bhindi fry.
I love okra and I don't even care about the sliminess, but my wife doesn't like the slime so she might like this recipe.
Can we have a version without the fish? It looks fabulous but I don't eat fish...

smh not true, it's not right to call food "slimey". It's not slimey, its good. Different food has different consistencies.
