      @@ulyasif515 I used salted, but if you don't know the brand or are getting a new brand of butter then go for unsalted. All brands of butter have a different amount of salt added to them, some can be very salty so watch out!

    I’ve been trying to make brownies for decades! Maybe even 40 years! This recipe is so simple and it produces delicious brownies. I reduced the sugars by half and added just a few grams of additional flour. I also used a loaf pan since I don’t own a 5” inch square metal pan. Despite all the modifications, the outcome was still fantastic. Thank you, Chef!

      @@mariabarnet9011 it’s not a totally different recipe. It is a less sweet, still delicious and fudgy version of Chef Hanbit’s recipe. Take your eyes and roll them elsewhere.

    I made these with ghirardelli chocolate because I couldn’t find couverture chocolate. As a complete novice to baking I think they came out great ! I might have needed a smaller cake pan because they didn’t come out as dense but still came out good ! Thank you Hanbit and hello from California!

    Okay Hanbit, you win. I made these and doubled the amounts; the smallest pan I have is a 9x9". Your science is correct, I had the components 1 and two then mixed with the dry. first time I weighed eggs! Followed to the letter and got a pan of what I call 12 pieces of trouble -felt like a drug dealer by taking them to work and there was a big sugar fueled fight over who had how many. I've probably made 40+ versions of fudge brownies over the years and this creation got me good. I will now use this as my go to 10 pieces of trouble (2 for me) thanks for the recipe -super easy to make.

    May I ask what percentage of Valrhona dark chocolate are you using in the batter?
    (I saw that you replied a comment saying Callebaut 815, but in the video you're using Valrhona feves, so I assumed that you were referring to the chocolate chips to decorate on top, not the dark chocolate in the batter.)

    And in general what i have experienced fan speed 1 is good for cakes and cookies and most pastries
    And fan speed 2 is suitable for breads
    Is it correct?

    Hi Hanbit... Could you kindly answer my following question?: Today i bought a different butter for my brownies. The result was terrible and i am sure is the butter fault because my cupcakes also went bad😭 (tragic culinary day before my daughter's birthday)... So i decided to do all over again BUT first transform the guilty butter in ghee (that i use to do for regular use) QUESTION: May i use ghee instead butter for brownies. If positive, which proportion... 1:1? Less?)

      yeah I guess it wouldn't matter to use ghee because you are going to melt the butter anyway. just use same amount!

    Its kinda difficult to get Liquid Coffee Flavor here, do you think that coffee powder will increase the chocolate flavour?
    I've tried with 1.5g but maybe you have something to advice?

    I see that you melt the couverture choc. without tempering it. When do we need to temper it? Is it only when we use it for glazing or moulding purposes? And dont need to temper it when we use it in the batter?

    I can't find the size of pan anywhere and really wanted to try your recipe and being new in baking really don't know how calculation works to scale up and down this recipe and the baking time it will be a big help if you can do measurements for common size pan and baking time
