Mine isn't dry. And my skin isn't rubbery. Crank your temp up higher and add stuffing to slow the cooking. It will make the hen more dense. I use dirty rice. Works perfectly. Just make sure your rice is 165°F. Ish when done. Looks good though! 👍
I plan on doing some Cornish hens. I plan on putting them in a wet brine overnight, similar to how I do a thanksgiving turkey. Some duck fat really works good for the skin too! I use it on my chicken wings. Those looks delicious 👏🏽

About how long at 350?
Until inside temp is 165°
Bet that skin was like leather. Gotta run them birds at 350 the whole way for crispy skin.
Yup. Or at least 325. That's my range for poultry.
Do you keep on the first rack or do you put them up on the second rack at that heat the whole time?
Non BBQ was probably dryer because the temperature was higher on that one. Should have rotated them for even cooking. But they both look great.
butter sounded better then olive oil spray
Invest in some basting brushes. Also mop on real butter, not that spray crap.
This was a dumb experiment. BBQ sauce vs not BBQ sauce. Of course the sauce is going to taste better
Not necessarily
